we get a bowing of the paper that makes the pages fold out someone from the middle. We have tried controlled experiements with many different grades of paper, and it does not seem to matter: therefore we go with the least expensive paper.

On thing we have found is that when you use the booklet mode in HP printer drivers and print and even number of copies, then it does this cool back to back thing that allows you to cut the pages for a book all from one side of the paper (not a good explaination, but try it). this means they paper does not bow away from itself in the middle and works better.

Also, the paper seems to become more flat after a day or so.

All in all, it has not been a major problem except in rare circumstances for us.
