Bass, Oslo, Norway

Seafood carpaccio with cured egg yolk flakes; pork knuckle meat with sage; duck hearts with crispy chicken skin; halibut with kohlrabi; king crab with chanterelles; cauliflower with almonds; carrots with pistachios; and honeyed plum flan to cap the meal - with food that's this good, we're absolutely all about this Bass, where Norwegian produce shines through sterling cooking.

Pjoltergeist @ Oslo, Norway

Pretty much a hole in the wall, tucked behind an unassuming entrance, Pjoltergeist is an intriguing hideout for produce that might prove to be an acquired taste - whale carpaccio, with a deep, raw & bloody flavour; duck hearts, fat & juicy but still uncompromisingly all offal; & Norwegian bluefin tuna, a rare find, since its catch is stringently regulated by the International Commission for the Conservation of Atlantic Tunas to curb over-fishing. Portions are princely; this food should be shared.

Alfred @ Nobel Peace Centre, Oslo

Named for Alfred Nobel, the resident cafe of Oslo's Nobel Peace Centre is a placid stop for a sandwich of Norwegian smoked trout bolstered by butter from Raros, Snofrisk cream cheese, caraway & capers - kick back & check out the selection of books on Nobel laureates, ideally after you've visited cavernous Oslo City Hall nearby, where the Peace Prize is awarded annually.
