Happy Birthday Jack

Jack is 4 today!! I know I said this on Janie's birthday but time seems to be going faster and faster. I cannot believe he is already 4. Jack is such a joy in our family, he loves to laugh and his laugh is contagious. He is so ticklish, you can tickle him anywhere and he will laugh, it's so funny. Jack is also our adventurous one, he will try anything! He has this little piece of wood from the face of a drawer and he uses it as his surfboard or skateboard, whatever suits his fancy that day. One day he decided he is going to sit on it and got down the stairs, Justin and I were aware of what he was doing and watched to see what happened. He went flying down the stairs and after we hear the big thud at the bottom we wait to hear the screams, instead he heard Jacks little voice yell, "That was AWESOME!" The other day I was out working on some things in the garage and Jack starts getting all of Justin's wrenches down from the wall, I didn't think anything of it because he loves to play with his dads tools. Next thing I know he has found the wrench that fits his training wheels and taken them off, all by himself. He wanted to ride without training wheels so he took them off, clever little boy. And now he can ride a two-wheeler without training wheels! That's our Jack, I am a bit afraid of the injuries to come because of his thrill seeking, he really takes after his dad in that regard! Happy Birthday Jack!

Summer Plans

Hey everyone! No one has posted in a while. We are doing well down here in Florida. We are getting ready for our Gedeon Family Reunion at the end of June and I am wanting to start to make plans for traveling out west. So, WHAT IS THE PLAN? Larson Reunion? When? Where? MACKAY? When? Recipes to Try

I thought we could share some of our recipes so here are a couple to start with. Oriental Chicken Salad: Dressing: Cooked chicken-shredded 2 TBS Brown sugar 1-2 heads green leaf lettuce 2 tsp. soy sauce 2-3 green onions - chopped 1 TBS sesame oil fresh cilantro - chopped 1/4 C veg. oil chow mein noodles 3 TBS rice vinegar Chop lettuce, place in bowl. Add shredded chicken, onions,& cilantro. Combine dressing ingredients, stirr well. Just before serving pour dressing over salad, toss to coat, and add chow mein noodles. Kool-Aid Playdough: 2&1/2 C flour 1/2 C salt 2 pkgs unsweetened Koolaid 3 TBS oil 2 C boiling water Combine flour, salt & koolaid. Make a crater in the middle & put in oil. Add boiling water quickly and stir. Let cool then knead with a little more flour until dough is not sticky. Continue to knead until dough is soft and completely combined. Creamy White Chili: 1 lb chicken breast, cubed 1 med. onion, chopped 1&1/2 tsp. garlic powder or 2 cloves 1 TBS oil 1 tsp. oregano 1/2 tsp pepper 1 tsp salt 1 tsp ground cumin 1/4 tsp cayenne pepper (optional) 2-4 cans (14.5 oz) great northern beans (rinsed & drained) 2 cups chicken broth 2 cans (4 oz) chopped green chiles 1 c sour cream 1/2 c heavy cream Saute chicken, onion & garlic in oil until chicken is done. Add beans, broth, chiles & seasoning; bring to a boil. Reduce heat, simmer uncovered for 30 minutes. Remove from heat; stir in sour cream & cream just before serving. You could blend up 1-2 cans of the beans before combining to add thickness to the chili. You could also do this in your crock pot just don't add the sour cream and cream until just before serving. Serve with fresh chopped tomatoes, sour cream & tortilla chips. *You could replace the cream with 1/2 & 1/2, or evaporated milk for less fat.

It's official!

Wow, a blog! A step in the modern, computer age direction. Now if I can just figure out how to post things and add a playlist and fix the header then I will be batting 1000. Hopefully all my wonderful children will help keep this blog up to date by posting little tidbits here and there about their amazing life growing up with us as parents! And maybe share some funny memories of us and they can add pictures if they want to. So lets get this thing rollin'. I will do my best to add my thoughts to this blog as well as leave comments on you kids' blogs.
