Recipes to Try
I thought we could share some of our recipes so here are a couple to start with. Oriental Chicken Salad: Dressing: Cooked chicken-shredded 2 TBS Brown sugar 1-2 heads green leaf lettuce 2 tsp. soy sauce 2-3 green onions - chopped 1 TBS sesame oil fresh cilantro - chopped 1/4 C veg. oil chow mein noodles 3 TBS rice vinegar Chop lettuce, place in bowl. Add shredded chicken, onions,& cilantro. Combine dressing ingredients, stirr well. Just before serving pour dressing over salad, toss to coat, and add chow mein noodles. Kool-Aid Playdough: 2&1/2 C flour 1/2 C salt 2 pkgs unsweetened Koolaid 3 TBS oil 2 C boiling water Combine flour, salt & koolaid. Make a crater in the middle & put in oil. Add boiling water quickly and stir. Let cool then knead with a little more flour until dough is not sticky. Continue to knead until dough is soft and completely combined. Creamy White Chili: 1 lb chicken breast, cubed 1 med. onion, chopped 1&1/2 tsp. garlic powder or 2 cloves 1 TBS oil 1 tsp. oregano 1/2 tsp pepper 1 tsp salt 1 tsp ground cumin 1/4 tsp cayenne pepper (optional) 2-4 cans (14.5 oz) great northern beans (rinsed & drained) 2 cups chicken broth 2 cans (4 oz) chopped green chiles 1 c sour cream 1/2 c heavy cream Saute chicken, onion & garlic in oil until chicken is done. Add beans, broth, chiles & seasoning; bring to a boil. Reduce heat, simmer uncovered for 30 minutes. Remove from heat; stir in sour cream & cream just before serving. You could blend up 1-2 cans of the beans before combining to add thickness to the chili. You could also do this in your crock pot just don't add the sour cream and cream until just before serving. Serve with fresh chopped tomatoes, sour cream & tortilla chips. *You could replace the cream with 1/2 & 1/2, or evaporated milk for less fat.
