Meet Ollie



Meet Ollie! Isn't she just the cutest thing you've ever seen? She is a labrador retriever mixed with a basenji.




Basenjis come from Africa, don't bark and can climb trees. Ollie barks but VERY rarely. Only when someone knocks or rings the doorbell and at balloons. She hates balloons. She doesn't climb trees either. I've never seen her climb one anyway!



                                      


I adopted her from Petsmart in 2005. Here she is as a little pup!



















Her mother was pregnant with her and her brother when she was rescued from New Orleans after Hurricane Katrina. She wasn't born until she came to NC but interestingly (is that a word?) she is deathly afraid of water. She won't go near lakes or creeks and like any dog, she hates baths! She was a Christmas present to my boyfriend (now my husband) and we have loved her like crazy since the first day we saw her. She is the sweetest, smartest dog I have ever met!! She knows when you are sick or upset and she will do her best to make you feel better. She can learn a new trick in one afternoon. She does have faults though. She chooses not to learn the Stay command. She always has to be on a leash or she will run at 90mph into the street. She has actually hit a car once. I have never been so freaked out in my life. She always comes back but not before she scares the daylights out of us!! We love her so much and we don't know what we would ever do without her. She is just like a child to us. I love you Ollie Ollie Oxen Free!!

Oh, baby!

Is it just me or are there babies popping up everywhere?! It seems like every one of my friends are either pregnant or have just had one. Three of my cousins just had babies, my best friend and about 5 other friends. Then I have a friend getting induced on Friday, a friend pregnant with twins and about 4 or 5 other friends who are in different stages of pregnancy. Talk about a baby boom! It's so exciting to hear about what they are going through, help them plan the room or the shower, talk about the sex and what to name them, visit them at the hospital. If I can't have children, by golly I'll be the best "Aunt" you've ever seen! Look at this picture of my best friend's daughter. I am honest to goodness in LOVE with this child. She is 4 months old today!






Notice her precious little pink and green outfit! Too cute!! Sorry for the not so hot picture quality. It was taken with my iPhone. Did ya'll know that they have fancy nursing rooms at the mall? I was so amazed. It was like a private living room with leather couches tucked away down a hallway that you had to buzz someone to let you into. Fancy stuff!

I'm still undecided on the pop personality outfit. I have decided to go with Cher for sure. I'm getting a long black wig that is parted down the middle. I have a spaghetti strap, right below my knees, body hugging sparkly dress that I can wear with some gold heels or I started thinking about doing the 70's Cher and wearing a scarf tied around my head and a fringed vest because I'm nervous about wearing that dress!! What do ya'll think??

Praline Cupcakes



YUMMY right?! They tasted just as delicious as they look. Here are the recipes I used so you can try them for yourselves!


Buttermilk Cupcakes

1 1/3 cups of all purpose flour
1/2 teaspoon of baking soda
1/2 teaspoon of baking powder
1/4 teaspoon of salt
1 cup of sugar
1/4 cup of butter at room temperature
1 large egg
1 teaspoon of vanilla extract
1/4 teaspoon of almond extract
1 cup of buttermilk

1. Preheat oven to 350 degrees and place liners in a 12 cup muffin pan.
2. In a medium bowl stir together the flour, baking soda, baking powder and salt.
3. In a large bowl beat the butter and sugar together with an electric mixer until it looks creamy.
4. Add the egg, vanilla extract and almond extract and beat until smooth.
5. Add half of the flour mixture and stir until almost combined.
6. Add the buttermilk and stir until almost combined.
7. Add the rest of the flour mixture and stir until completely combined.
8. Divide mixture evenly into the muffin cups.
9. Bake for 18-20 minutes at 350 or until a toothpick inserted in center comes out clean.
10. Let cupcakes cool for 10 minutes then transfer to wire rack.
11. Make sure they are cold to touch before frosting.


If you don't like pralines for some crazy reason, at least make these cupcakes with your favorite icing. They are some of the yummiest cupcakes I've ever had!!!




Praline Frosting

(Bear with me on this recipe. I made it up.)

4 sticks of unsalted butter, softened
3 cups of confectioners sugar
4 homemade or store bought pralines

1. Break the pralines up into small pieces and pulse in the food processor until you get the consistency of brown sugar.
2. With an electric mixer, beat the butter until creamy.
3. Add 1 cup of confectioners sugar and stir in.
4. Continue adding each cup of confectioners sugar and stirring after.
5. Add the praline mixture and stir until just blended. (Beware: This icing is VERY sweet and VERY thick. You will not need much for each cupcake.)




Whipped Cream

1 cup of heavy cream
2 teaspoons of vanilla extract
2 teaspoons of confectioners sugar

1. Beat the cream and vanilla together until they form a lazy peak
2. Sift the sugar over the cream and beat until you get a sturdier but still soft peak. Make sure not to beat too much or it will form lumps.

I put the whipped cream in a freezer bag and cut a corner off and plopped some on top of each cupcake after I frosted it.




Candied Pecans

WARNING: These are addictive. This recipe makes way more than what you need for the cupcakes and you might gain a couple pounds because you will end up eating the rest.

1 egg white
1 tablespoon of water
1 pound of pecan halves
1 cup of white sugar
3/4 teaspoon of salt
1/2 teaspoon of ground cinnamon

1. Preheat oven to 250 degrees and grease a baking sheet.
2. In a mixing bowl, whip together the egg white and water until foamy.
3. In a separate bowl, mix together sugar, salt, and cinnamon.
4. Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet.
5. Bake at 250 degrees for 1 hour. Stir every 15 minutes.

Blush Secrets (Part One)

Wearing the right shade of blush and applying it correctly for your face shape can give you a healthy looking flush and slim your face! I'm going to give ya'll some tips I found in the latest Women's Health magazine on wearing your blush the right way so you can illuminate your skin and bring out your beautiful eyes!


Use your eye color as a guide to choosing the right shade of blush.


Blue Eyes

Good choice: Peaches and icy pinks will draw attention to light colored eyes.
Bad choice: Plum. Instead of enhancing your eyes, it will minimize them.


TRY Bare Minerals Blush in Vintage Peach.








Green Eyes

Good choice: Any shade of pink will make your eyes appear greener and more striking.
Bad choice: Deep plums will neutralize the yellow flecks.


TRY NYX Powder Blush in Pinky.






Brown Eyes

Good choice: Berry hues will make your brown eyes pop.
Bad choice: Neutrals or browns will leave you looking drab.


TRY MAC Liberty of London Powder Blush in Dirty Plum.







Hazel Eyes

Good choice: Mauve will play up the combination of green and amber.
Bad choice: Orangey pinks will dull the base color of gray in hazel.



TRY Loreal Feel Naturale Powder Blush in Marvelous Mauve.

My first Blog Award!

Wow! Today is just full of firsts for me!! I am so thankful to have such great blogger friends! Charlotte, that sweet, beautiful mama over at The Charlotte Observer just awarded me this. Stop by her blog when you can, you won't regret it! She is full of joy and happiness and precious pictures!!






Ten things that make me happy:

1. Coming home to my wonderful husband and my sweet dog every night and feeling safe and content.

2. Knowing that I have an amazing God up there watching over me who loves me unconditionally.

3. New clothes. Wait, who am I kidding? New ANYTHING! I just love new things. It could be a pencil for goodness sakes.

4. Making cupcakes. I am new at it but I love trying out new recipes and tasting the final product! I love to be creative and think up new combinations and ways to decorate them.

5. Sunshine, the beach, margaritas... (Don't ya'll like how I snuck 3 in there?)

6. Sitting out on my screened in porch with a good book.

7. Getting my hair, nails, and toes done. It's actually quite superficial but it makes me feel good nonetheless!

8. Kids. I love kids! I love new babies and watching them smile or watching children run around and play. They are so happy and so oblivious.

9. Trips with my family. I cherish every moment we spend together and the memories we make.

10. Laughing and spending time with friends. I love remembering old times and inside jokes. I love having everyone over and watching everyone mingle and enjoy themselves.



Ahhh!! It's over already? I could do this all day! Of course ya'll probably don't want to sit here and read my blog all day so I'll just go ahead and award some of my newest sweet friends with this award instead. Love you girls!

In need of some assistance pretty please.

My week and weekend have suddenly filled up like crazy and I am not prepared for parts of it!! We are working at the church concession stand, having girl's night out downtown, having some friends over for dinner and the kicker, my sister is having a pop personality going away party this Saturday night! She is going back to Korea to teach English again. Two years ago she went for a year to teach and she fell in love with the kids and the job. She took a year off to come back home but she's heading back to Korea on the 20th!!! We will miss her like crazy but we are so very proud of her!!!! She is in a Lady Gaga phase obsession right now, so she will be dressing up as her. I'll be doing her hair and makeup and I extremely excited about it!!! Here is the picture of inspiration. I don't know if she will be brave enough to go for this outfit but the hair and makeup is a definite.




Okay, onto my problem. I don't know who I'M going to dress up as!! I have a couple of ideas but I need ya'lls help!!! Here are my two ideas. Let me know what you think or if you have any better ideas!



My first idea is Cher. I can get a wig because my hair isn't dark enough to really pull the Cher look off. It doesn't have to be a long dress like this. I was thinking maybe just a short sparkly dress of some sort. Actually I have one!! It's beige and gold sparkly.





My other idea was Jennifer Lopez. I'm thinking "Jenny from the Block". I want to do her more glamorous looks but no one would know who I was. Here's a picture I found. Love the hat...but ya'll know I wouldn't wear that shirt in public.




I'm all out of ideas!! What do ya'll think??
