So I made this ice cream yesterday (I made the strawberry version) and it just might have been th worst soy ice cream i have ever eaten. The flavour was wretched! Has anyone used this recipe before? I made it with the tofu. Would perhaps the soy yogurt be a better idea? If anyone has any suggestions, or perhaps a better ice cream recipe that they could recommend, I'm all ears. The problem with most recipes is that they contains a lot of sugar. I use something called xylitol instead of sugar, which is derrived from birch bark, because I can't digest sugar too well. I guess I could just substitute the sugars for one another... bah! thanks.

I am a major fan of BBQ sauce; I absolutely love it. However, being a vegetarian, I feel deprived from being able to eat it. I have no idea what to use it with anymore. Does anyone have any ideas?

Tortellini Florentine Soup: Serves 3 [23 Apr 2006|08:52pm]

Modified from a recipe found on Recipezaar. It was really good served with some homemade bread!

  • 1 T olive oil
  • 1 can vegetable broth
  • 4.5 oz frozen tortellini (I used cheese)
  • 1/2 small green pepper, chopped
  • 1/2 small yellow pepper, chopped
  • 1/4 c chopped carrots
  • 1/4 c chopped onions
  • 1 clove garlic, minced
  • 2 c diced tomatoes
  • seasonings: pepper, garlic powder, parsley flakes, basil, oregano
  • optional garnish: Parmesan cheese

    In large saucepan, heat olive oil until hot over medium high heat. Saute all vegetables except tomatoes with the garlic until slightly tender. Increase to high heat, add tomatoes, broth, tortellini, and seasonings. Bring to a boil, reduce heat, cover tightly, and simmer for 10 minutes. Top with a little Parmesan cheese, if desired.

    I used this combo of veggies since that's what I had on hand to use up, but there's a wide variety that would taste great in this!

    I live in a dorm, so the things I can cook are quite limited
    I do however have a hot plate, so tonight I made a little pasta thing that I really like:

    1 cup of pasta (i like Barilla Plus Penne)
    a tablespoon or 2 of chunky peanut butter melted
    and a little soy sauce (a tablespoon or less)
    if you had oil and wanted it to be sauce-ier you could add some

    it's pretty rough and not the healthiest but if you are running low on food, usually soy sauce and peanut butter are staples people have around
    and it's also good if you have random veggies like broccoli, carrots, etc to throw in
    also good with tofu
    hope you're all enjoying your sunday evening meals!

    Avocado Fudge Recipe

    INGREDIENTS:

    1 avocado, ripened
    1/2 cup margarine
    1 tsp vanilla
    1 cup cocoa
    3 cups powdered sugar
    1/3 cup chopped walnuts (optional)
    PREPARATION:

    In a medium sized saucepan, melt the margarine over low heat.
    Once margarine is melted, puree with avocado in food processor or blender until perfectly smooth. Be sure there are no chunks of avocado left!

    Return mixture to saucepan over very low heat and aff the rest of the ingredients,except the walnuts, adding the powdered sugar a portion at a time.

    We're just back from the market where we bought, among other delicious things, a box of 30 quail eggs. They're so tiny and cute! But I have no idea of what to do with them. Any ideas? I think I'd like them better in appetizers, but anything is welcome!

    In case some people don't know what they are, here are two quail eggs next to a regular hen egg:

    I'm making a nice Indian food dinner tonight for some guests. I was going to do somosas, Dal Makhani, and a spicy curried cauliflower. I'm thinking the last one can use another ingredient. I thinking generally the cauliflower dish will be spiced like aloo gohbi but without the potatoes. (Curry powder, mustard seeds, cumin, hot chillies, ginger etc.)

    What else should I toss in there? I'm leaning towards collard greens, perhaps pre-boiled to keep them from dominating the dish.

    i have a mini crock pot (2 quarts) that my sister gave me for christmas...and i realized this morning that i have yet to use it! does anyone have any good crock pot/slow cooker recipies? recipies meant for full-sized crock pots are fine - i can probably just half all the ingredients so i can fit it in my little guy. :)

    i just made this and so far its real good. & real versatile!

    SOME SORT OF PASTA / VEGGIE DISH:
    make:
    half a box of your fav. pasta

    while you do that, in some skillet first get your fav olive oil nice and hot then add:
    oregeno
    red pepper flakes
    salt & pepper
    2 pieces of a clove garlic
    1 small zucchini, cut anyway you like (i did strips)

    turn the heat down to a simmer then add:
    about an 1/8 of a regular jar of your fav pasta sauce, or whatever else you feel fits.
    1/2 can of corn (its waht i had in the fridge, it might be better with less)
    anmy other veggies / spices whateverrr i added more oregeno and more red pepper <33
    simmer for about 10 minutes, less for crunchier zucchini.

    toss with the pasta, yumm. i liked mine realllllly spicy and it turned out well. :]

    Hello. A couple days I asked a question about eating Tofu for the first time. Well, I made it the other day and it was way gross. It tasted like marinaded animal fat, ick. I mixed it in with some rice, veggie broth, carrots, green peppers, and onions. So now I have the other half to make, I'm thinking deep frying it to fix the soft problem.. any experiences with that?

    A while ago I posted a request for suggestions about what I could put in okonomiyaki. There were one or two folks who were curious about what okonomiyaki actually entails, so since I was cooking some up tonight I thought I'd grab a photo and post it here.

    Also, here is a recipe for okonomiyaki, though personally I don't know why it includes sake. I think it can be omitted safely. The point is to make a pancake-style thingy, and put your favorite ingredients in, then top it with ultra-yummy aonori and okonomiyaki sauce. Like the insides, though, you can also put anything you want on top.

    Here is a nice, though non-veggie recipe which seems about right for the purposes of most people, just use whatever veggies you have a hankering for.

    The tofu on the left there is cold, with green onions, a little ginger paste, and soy sauce. Both these things usually have bonito shavings topping them off, but I think they're quite tasty without.

    Hey, so I'm a huge fan of black bean burritos. Like, I don't ever get tired of them. But I'm wondering if anyone has any ideas to make them even better. I usually use chili powder (obviously), cumin, paprika, garlic, onions and tabasco sauce. What do you all use?

    I ususally make strawberry banana but I wanted to try something different.

    bananas
    frozen mango chunks
    canned peaches
    canned pineapple
    pears
    honeydew melon
    milk
    soy milk
    plain yogurt
    honey
    applesauce
    orange juice
    unsweetened cocoa
    spices - cinnamon, nutmeg, cloves, etc
    chocolate/vanilla pudding
    whipped cream

    I made this up last night and it turned out to be *incredible*. I'm making again tonight, had to share:


    Roasted Tomato Salad

    1 package grape tomatoes
    2-4 oz French Feta
    4 cups fresh baby spinach
    1/4 cup toasted pine nuts
    4 slices sour dough bread
    Butter
    Olive Oil

    Slice tomatoes in half and place face down on an oiled cookie sheet. Drizzle oil on top and sprinkle with salt, pepper & garlic powder. Roast in pre-heated 400 degree oven for 15 minutes.

    In the meantime, sauté pine-nuts in about 2 tsp of olive oil until light brown.

    At the same time, butter the bread (both-sides), sprinkle with salt & pepper. Place in heated frying pan and cook until light brown on both sides. Careful, you don’t want it to be hard all of the way through, but rather crispy on the outside, soft on the inside. While still warm, cut into cubes.

    Pour warm pine-nuts and tomatoes over spinach, add feta & bread crumbs, drizzle with olive oil, toss and serve.


    (Serves 2 comfortably if you’re having this as a meal, as a side salad it will probably feed 4)
