Classic Chili Spice Mix
1 cup Chili Powder
1/2 cup Cumin
1/4 cup Garlic Powder
1/4 cup Minced Onion
2 Tbs Oregano
1 Tbs Sugar (or equivalent)
1 Tbs Salt
1 tsp Pepper
1/4 tsp cayenne (optional)
Use 2 Tbs of mix to season 1 lb of ground beef, 1 can of diced tomatoes with juice (or 2 cans of tomato sauce), 2 cans of pinto beans and 2 cans of kidney beans. I don’t drain my cans. If you prefer to drain them, add more sauce or water to make up the volume in liquid.

I’m just catching up on these. Thanks for doing this; they look great.
One thing that puzzles me is the use of “chili powder.” Isn’t chili powder just a mix of spices already? My daughter mixes her own chili powder, but it is too spicy (hot) for me, lol. Any advice or info would be appreciated. 🙂
Thanks, Josie! You are correct. Chili powder is a mix of spices the main one being ground red chilies. By themselves they are really HOT, so the mixture helps tone down the heat. I’ve purchased chili powder from a bulk food store before and it turned out to be straight ground chilies—-yuck. It was slightly less powderful than cayenne, but only slight. So I use the mix and find it gives the balance I grave. It doesn’t cost anymore than the straight stuff and is a lot more readily available (Aldi :).)
