- 1 large shallot, diced shopping list
- 1 red pepper, diced small shopping list
- 1 cup frozen corn, thawed shopping list
- 1 cup frozen peas, thawed shopping list
- 1 cup frozen lima beans, thawed shopping list
- 1 can cannelini beans, drained shopping list
- 1 can black beans, drained shopping list
- 1 cup vegetable stock shopping list
- 1 can diced tomatoes shopping list
- 1/2 teaspoon each, rosemary, thyme, sage shopping list
- 1 tablespoon butter shopping list
- 1/4 cup balsamic vinegar shopping list
- 1/4 cup white wine shopping list
- 1/8 cup lemon juice shopping list
- Salt and pepper, to taste shopping list
How to make it
- In a medium size sauce pot, over medium heat, cook shallots, pepper, peas, and corn, stirring until shallots are translucent.
- Add herbs, lima beans and vegetable stock, and white wine.
- Raise heat and bring liquid to a boil. Simmer liquid to reduce by half, about 10 minutes. Add tomatoes, black beans, and white beans and heat through.
- Add butter, lemon juice, balsamic vinegar, and salt and pepper to taste.
