One-dish Beef & Mushroom Skillet Dinner

- 1 lb. ground beef {beef /turkey} shopping list
- 1 med. onion, chopped shopping list
- 1-3 cloves garlic, minced shopping list
- 1 can condensed Campbell's Condensed Golden mushroom soup shopping list
- 1 can (10 1/2 oz.) Campbell's condensed beef broth {I use Better than Bullion} shopping list
- 1/2 tsp. thyme {fresh is nice} shopping list
- 1-14.5 oz. can diced tomatoes shopping list
- 1 small zucchini, sliced shopping list
- 1 1/2 cups uncooked rotini pasta {whole wheat is great} shopping list
How to make it
- Cook the beef, onion, and garlic* in a 10-inch skillet over medium-high heat until it's well browned, stirring often to separate the meat. Pour off any fat.
- Stir the soup, broth, thyme, tomatoes, and zucchini into the skillet. Heat to a boil. Stir in the pasta. Reduce the heat to low and cook for 15 minutes** or until pasta is tender.
- *don't add garlic until the last 3-4 min. of cooking, so it doesn't scorch
- **whole wheat pasta takes a little longer
