Vegetable Barley Soup
Ingredients
- 1 cup pearled barley
- 1 box chicken broth
- 1 cup water
- 3 cloves garlic, minced
- 1 lg onion, finely chopped
- 4 lg stalks celery, finely chopped
- 3 lg carrots, finely sliced
- 3 red potatoes, diced
- 1T. sea salt
- 1/2 t. fresh ground pepper
- 2T. tarragon
- 1T. celery seed
- 2T. basil
How to make it
- Cook barley to directions in pot. Takes about 60 min.
- Meanwhile, sweat in stock pot, garlic, onion and celery.
- Add chicken stock, water and rest of vegetables.
- Add spices.
- Simmer vegetables on Low, til barley is done.
- Add barley and it's liquid, which thickens the soup nicely, on Med-Low until the vegetables are tender. Stir occasionally.
- May need more sea salt at the end.
