How to make it

  • 1. Place the couscous in a bowl and heat the chicken broth in the microwave and then pour on the couscous and cover and let stand for 5 minutes.
  • 2. In another bowl whisk together the olive oil, lime juice, vinegar and cumin, dill, parsley, then add the green onions, red pepper, cilantro, corn and beans toss to coat.
  • 3. Fluff the couscous and add the other ingredients and mix well, season with the salt and pepper to taste then cover and let chill.
