Healthy Vegetarian Sauce

- 1 tbsp olive oil shopping list
- 2-3 garlic cloves minced shopping list
- 1 large onion sliced shopping list
- 1 pkg (8 oz) sliced mushrooms shopping list
- 1 zucchini cubed shopping list
- 1 small eggplant cubed shopping list
- 3 carrots shredded shopping list
- 1 red pepper cubed shopping list
- 1 pkg of Premade meatballs (beef, turkey, chicken) shopping list
- 1 (28 oz) crushed tomotoes shopping list
- 1 (14.5 oz) Fired roasted diced tomatoes shopping list
- l (8 oz) No salt tomatoe sauce shopping list
- 1 cup beef broth shopping list
- Seasonings: shopping list
- 1 tbsp italian seasoning shopping list
- salt & pepper to taste shopping list
- 1 tsp thyme shopping list
- dash red pepper flakes shopping list
- 1/4 cup oregano shopping list
- 1/4 cup basil shopping list
- 2 tbsp parmesan cheese shopping list
- 1 tbsp Sun dried tomatoe paste shopping list
- 1/2 cup dried red wine shopping list
- Optional : dried tomatoe bits (1 tbsp) shopping list
How to make it
- In large saucepan heat olive oil.
- Add garlic, mushrooms, zucchini, eggplant, mushrooms, carrots, red pepper and sundried tomatoe paste. Sauce till tender.
- Add seasonings and mix well.
- Add meatballs and brown (about 5 minutes)
- Add tomatoes, fire roasted tomatoes, sauce, broth, wine (At this time, I rinse out tomatoe cans with water and add to pan- not too much-about 1-1/2 to 2 cups water only) (If too thick-then add a little more)
- Coven and simmer for 2-3 hours on low.
