Mom's American Chop Suey

- 1 lb elbow macaroni, prepared per instructions on the box shopping list
- 2 cans stewed tomatoes shopping list
- 2 T tomato paste shopping list
- 1 lb ground beef shopping list
- 1 lb ground veal shopping list
- 2 large bell peppers, chopped shopping list
- 1 large vidalia onion, chopped shopping list
- 2 cloves garlic, smashed and diced shopping list
- 1 stick of butter, divided into tablespoons shopping list
- 4 slices American cheese shopping list
- S&P to taste shopping list
How to make it
- In a large skillet, melt 2 T butter and add the onion, garlic and green pepper and cook until the onion is translucent, or about 5 minutes
- Add the ground beef and veal and brown on medium high allowing much of the moisture to cook off. Drain the liquid if there's too much.
- Add the canned stewed tomatoes, and crush them with a spoon in the meat mixture as you cook them
- S&P to taste
- Add 2 more T of butter ( so far you've used 1/2 stick)
- Add the tomato paste and stir in
- Prepare the macaroni per the instructions on the box. (salt the water!)
- Drain and add the sauce
- Heat the oven to 350
- Place the remaining 4 T of butter on top of the pasta, and break up the 4 slices of American cheese and layer on top as well
- Bake uncovered in the oven for about 20 minutes
- Remove from the oven and stir in all that cheese and butter. (I know it doesn't sound very healthy, but man, it is DAMN good!!...And my mom is 85 and still going strong, so follow her advice: Live while you're alive)
