Apple Cake With Orange Marmalade Or Apricot Glaze

- For the pastry: shopping list
- 200 g flour shopping list
- 100 g butter cut up shopping list
- 1 pinch salt shopping list
- 50 g sugar shopping list
- 1 large egg shopping list
- 2 tsp pure vanilla flavor shopping list
- For the apples: shopping list
- 750-900 g apples shopping list
- 1 - 2 tsp lemon juice shopping list
- optional: candied chopped nuts shopping list
- glaze: shopping list
- 2 heaped tablespoons orange marmalade or apricot preserves shopping list
- 2 tablespoons orange juice or orange liqueur shopping list
- Optional: powdered sugar for dusting, shopping list
- whipped cream for topping pieces shopping list
How to make it
- Make dough:
- combine flour, salt, sugar
- cut in butter to make crumbs
- Blend in egg and vanilla to make a dough ( use a fork to combine very well - it will stick together )
- Cover and let rest 30 minutes in the refrigerator or cool place to firm up dough for easier handling
- Roll dough out dough on a floured surface to fit a well buttered round tart pan ( 24-26 cm ) with removable bottom
- Note: I rolled the dough between sheets of floured wax paper, was easier that way for me to do
- Place and press dough into pan and up sides
- Preheat oven to 400F
- Meanwhile peel and slice apples
- Place apple slices in a concentric pattern to cover the dough , filling in all spaces as best as possible
- Sprinkle apples with a little fresh lemon juice and some chopped candied nuts if desired
- Bake in center oven rack 30+ minutes or apples tender and crust is pale golden
- Meanwhile heat the marmalade with the juice or liquer and stir smooth
- Remove cake from oven, and pour on evenly the glaze
- Let cool completely
- If desired sprinkle with powdered sugar and top pieces with whipped cream
