Toad In The Hole

- 1 1/2 cups all purpose flour shopping list
- 4 eggs shopping list
- 1 1/2 cups milk shopping list
- 1/4 teaspoon salt shopping list
- 4 tablespoons veg oil shopping list
- 8 large sausages shopping list
- A deep Baking tray - about 10" x 15" shopping list
How to make it
- Put the flour in a large mixing bowl, make a well in the center and beat in the eggs and salt.
- Add the milk, slowly, beating all the time.
- Beat the batter really well, until bubbles form on the top - or you can do this with an electric mixer or in a blender.
- Pour into a jug and place in the fridge for 30 minutes.
- Heat the oven to approx 425, gas mark 8 ( a bit lower for a fan oven).
- Prick the sausages and gently fry them in a skillet for 4-5 minutes until just colored.
- Heat the oil in the tray until very hot - nearly smoking.
- Carefully but quickly add the sausages, leaving space between them.
- Pour the batter around and in between them and immediately pop them back in the oven for 25 minutes.
- The batter will raise up, especially around the edges.
- Serve with a thick brown gravy and your favorite veggies.
- This batter is also used for Yorkshire Puddings, traditionally served with roast meat - made in the same way but in individual bun tins. My grannie used to make extra little Yorkshire Puds and serve them with lemon juice and sugar - scrummy!

I've been wanting to make this since you posted it. Didn't turn out as puffy and brown as yours but I'll keep trying. It was deelicious! Pretty pleased for my first attempt. A bit more in:
