Dogwood Chicken

- 4 skinless, boneless chicken breasts shopping list
- ¼ cup white rice flour shopping list
- ¼ cup vegetable or peanut oil shopping list
- 2/3 cup pulpy orange juice shopping list
- 2 large peaches, peeled and sliced shopping list
How to make it
- Preheat oven to 375F.
- Dredge chicken in flour, shake off excess.
- Place chicken in a casserole dish large enough for chicken plus a layer of peach slices, but do not add the peaches.
- Heat orange juice and oil until very warm, pour over chicken.
- Bake 30 minutes, basting twice.
- Place peach slices around chicken and baste bird again.
- Bake 20 minutes longer, basting two to three times over both chicken and peaches.
- Serve over hot rice pilaf and steamed vegetables.
