Broccoli, Rice And Cheese Casserole

- 1 Tbsp butter or margarine shopping list
- 1 small onion, chopped shopping list
- 2 cloves garlic, minced shopping list
- 1 4.3 oz. pkg Rice a Roni Long Grain and Wild Rice (original) Mix shopping list
- 2 1/2 cups fresh broccoli florets shopping list
- 1/2 cup coarsely chopped walnuts or pecans, toasted shopping list
- 1 cup (4 oz) shredded sharp cheddar cheese shopping list
How to make it
- In medium saucepan, over medium-high heat, melt butter.
- Add onion and garlic and saute 2 minutes
- Add 1 2/3 cups water, rice mix and seasonings packet. Stir.
- Bring to a boil, reduce heat to low. Simmer 20 minutes.
- Stir in broccoli. Cover. Simmer 10 more minutes, or until white rice is tender. Stir in cheese to combine and allow cheese to melt.
- You can either serve directly from the saucepan, topped with the nuts, or you can spread in a greased casserole dish and put more grated cheese and the nuts on top, and put in the over to keep warm until serving time.
