One-bowl Banana Bread

- 3-4 ripe bananas shopping list
- 1/2 cup butter or margarine-melted shopping list
- 3/4 cup brown sugar shopping list
- 2 eggs shopping list
- 1 tsp vanilla shopping list
- 2 cups flour shopping list
- 1 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp cinnamon (optional) shopping list
- pinch of nutmeg (optional, but nutmeg and bananas are best friends :) shopping list

- 1/3 cup chocolate chips or nuts shopping list

- Replace 1/4 cup of flour with unsweetened cocoa powder. (no more or the loaf won't hold together) shopping list
How to make it
- Preheat the oven to 350F, and lightly grease a 9x5" or 8x4" loaf pan (I only use glass)
- In a large bowl mash the bananas with a fork, and make a well in the center of the mashed bananas (pushing the bananas up the sides of the bowl). Add the brown sugar and melted butter in the well and stir to combine. Add in the eggs and vanilla and mix with the sugar and butter. Then incorporate the bananas without over mixing.
- Place a sieve over the bowl and sift in the flour, baking soda, salt and spices. If you're adding chocolate chips or nuts, add them in now.
- Fold together until it's just combined. Pour batter into the loaf pan and bake for 55-65 minutes, until a toothpick inserted in the center comes out clean.
- Let cool for at least 30 minutes before cutting into, if you can.. ;)
- ~For Muffins, grease a 12 cup muffin tin and bake for 20-25 minutes.
