Southwest skillet chicken

- 1 lb chicken boneless, skinless breasts cut up into bit size pieces or can leave whole. shopping list
- 2 Tbls olive or vegetable oil shopping list
- 1 pkg (160z) bag of frozen mixed vegetables, corn, red pepper and broccoli combo. shopping list
- 1 medium onion diced. shopping list
- 2/3 cup picante sauce. shopping list
- 1/3 cup water. shopping list
- 1 ts chili powder shopping list
- salt and pepper to taste shopping list
- red pepper flakes, optional if want it a bit more spicy. shopping list
How to make it
- Heat skillet that has a lid with the oil to medium high.
- Add chicken either diced or whole.
- Add onion.
- Cook chicken and chopped onion till juices run clear and chicken lightly browned approx 7 minutes.
- Add all other ingredients and bring to a boil.
- Reduce heat to low and cover.
- Cook covered for approx 15 to 20 minutes to allow flavors to meld together.
- Enjoy.
