Lentil and Bacon Soup

- 1 pkg - 16 ounce (2 1/4 cups) dried lentils, sorted & rinsed shopping list
- 2 cans (14 ounces each) ready to serve vegetable broth shopping list
- 1 pkg (6 ounces) Canadian bacon. You can use ham or regular bacon. shopping list
- 2 medium carrots (1 cup) cut into 1/2 inch pieces shopping list
- 1 medium potato (1cup) peeled and cut into 1/2 inch pieces shopping list
- 1 medium onion (1/2 cup) chopped shopping list
- 1 medium celery stalk (1/2 cup) cut into 1/2 inch pieces shopping list
- 4 cups water shopping list
- 1 teaspoon dried thyme leaves shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
How to make it
- Mix all ingredients into a 3 1/2 - 6 quart slow cooker
- Cover and cook on low for 8-9 hours or high for 3 -5 hours.
- Stir before serving.
- Serve with cornbread. Yum.
