Cashew Cookies

- ½ cup butter, room temperature shopping list
- 1 cup packed brown sugar shopping list
- 1 egg shopping list
- 1 teaspoon vanilla extract shopping list
- ⅓ cup sour cream shopping list
- 2 cups all-purpose flour shopping list
- ¾ teaspoon baking powder shopping list
- ¾ teaspoon baking soda shopping list
- ¼ teaspoon salt shopping list
- 1¾ cups salted cashews, coarsely chopped shopping list
- whole cashews for garnish, optional shopping list
- Browned butter frosting shopping list
- ½ cup butter shopping list
- 2 cups powdered sugar shopping list
- 3 tablespoons heavy cream shopping list
- ¼ teaspoon vanilla extract shopping list
How to make it
- To make the cookies, cream together the butter, brown sugar, egg and extract in a large bowl.
- Stir in the sour cream.
- Stir in flour, baking powder, baking soda and salt.
- When ingredients are well blended, gently stir in the chopped cashews. I like to keep the cashews coarsely chopped rather than finely diced – I like the crunch of the larger pieces, but chop yours however you prefer.
- Drop dough by spoonful onto lightly sprayed or greased baking sheets.
- Bake at 375 degrees for 8 to 10 minutes, just until very lightly browned on the bottom.
- Cool cookies on waxed paper before frosting.
- To prepare frosting, place butter in medium saucepan and cook over medium heat until butter begins to turn to a golden color (watch carefully so you don’t burn the butter!).
- Remove saucepan from burner and stir in powdered sugar, cream and extract, stirring vigorously until smooth and well blended.
- This frosting will thicken a bit as it cools, so add more cream to thin it, if necessary, as you are frosting the cookies. If frosting is too thin, stir in a bit more powdered sugar.
- As you frost each cookie, place a whole cashew on top for garnish, if desired. You need to do this as you frost each cookie so the nut will adhere to the frosting before it dries.
- NOTE: macadamia nuts make a great substitute for the cashews, too!
