Smoked Salmon Salad

- 3 cups mixed salad greens shopping list
- 1 ear of fresh corn shopping list
- 4 ounces thinly sliced smoked salmon shopping list
- 3 tablespoons toasted pine nuts shopping list
- 1/4 cup crumbled goat cheese shopping list
- 1 teaspoon finely chopped fresh dill shopping list
- 2 tablespoons extra virgin olive oil shopping list
- 1 tablespoon lemon juice shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- Fresh baguette warmed shopping list
How to make it
- Divide greens between two servings plates then set aside.
- Use serrated knife to carefully cut kernels from the ear of corn.
- Divide the kernels between the two plates.
- Cut the salmon into thin strips and scatter them over each salad.
- Top each salad with half of the pine nuts, goat cheese and fresh dill then set aside.
- In small bowl whisk together olive oil, lemon juice, salt and pepper.
- Drizzle over each salad and serve with baguette.
