Spicy Cajun Pasta

- 6 ounces EVOO (extra-virgin olive oil) shopping list
- 1 yellow onion, minced shopping list
- 2 cups vegetable stock shopping list
- 7 medium-sized garlic cloves, crushed shopping list
- 6 cups skinned and diced roma tomatoes shopping list
- (canned is fine too) shopping list
- 1 cup of string carrots (usually you can buy them already in strings) shopping list
- 1 yellow bell pepper (cut in strips) shopping list
- 1 green bell pepper (cut in strips) shopping list
- 3 tablespoons thinly sliced fresh basil leaves shopping list
- 1 tablespoon minced fresh oregano leaves shopping list
- handful of cajun seasoning shopping list
- 1 tbsp. cayenne pepper shopping list
- salt and freshly ground black pepper shopping list
- 1 tbsp. kosher salt shopping list
How to make it
- Cut bell peppers and carrots into strings.
- Dice onions and garlic.
- In a larg saucepan, heat olive oil. Add onion and cook over medium to low heat until transparent.
- Add garlic and cook until almost brown.
- Then add tomatoes, vegetable stock, bell peppers, carrots, cajun seasoning, cayenne pepper and cook for 1/2 hour over low to medium heat stiring every few minutes. (don't let it burn on the bottom of the pan)
- In a large stock pot, fill with water about 2/3 full, and add 1 tbsp. kosher salt and stir. Let boil, then add pasta noodles. Boil al dente.
- Back to the sauce...Add the 2/3 of the basil and all of the oregano and continue to cook for another 1/2 hour.
- Sauce should reduce down to a farely thick consistancy.
- Season, to taste, with salt and pepper. Turn off heat.
- Drain pasta, and put back in the stock pot.
- Add 3 tbsp. EVOO, and dice a little basil and mix.
- Add sauce to pasta noodles and stir...
- NOW EAT!!!
- ****add chicken, shrimp, or crab meat for extra fun! I also like to add some garlic bread to the feast! :)
- tip: if adding shrimp or crab meat, don't mix it in the sauce ahead of time.
