Sweet Potato Casserole

- 4 1/2 cups cooked and mashed sweet potatoes (I use canned) shopping list
- 1/4 cup butter, melted shopping list
- 1/3 cup milk (or less, you don't want it to be runny) shopping list
- 1/3 cup brown sugar shopping list
- 1/2 tsp vanilla extract shopping list
- 2 eggs, beaten shopping list
- 1/2 cup flour shopping list
- 1/4 cup butter shopping list
- 1 cup chopped pecans shopping list
- 1/4 tsp nutmeg (or pumpkin spice) shopping list
- 1 tsp cinnamon shopping list
- 1/3 cup brown sugar shopping list
- Optional: marshmallows for topping, enough to cover the top or to form a nice pattern. shopping list
How to make it
- Preheat oven to350 degrees F (175 degrees C).
- Grease a 9 X 13 inch baking dish.
- In a large bowl, mix together mashed sweet potatoes, 1/4 cup of melted butter, milk, brown sugar, vanilla extract and eggs. Add milk carefully, you may have to adjust the amount of milk to ensure the mixture isn't runny.
- Spread sweet potato mixture into the prepared baking dish.
- In a small bowl mix together the other 1/3 cup of brown sugar and flour.
- Cut in the other 1/4 cup butter until the mixture is crumbly.
- Stir in pecans.
- Sprinkle pecan mixture over the sweet potatoes, covering it completely.
- Bake for 25 minutes in preheated oven or until golden brown.
- 5 minutes before it's finished baking remove from oven and place marshmallows on top and continue baking until marshmallows are melted and browned.
