Beef Kalio

- oil for deep frying shopping list
- 2 large onions, sliced shopping list
- 4 medium sized potatoes, quartered shopping list
- 800g (1Ib 12oz) cubed beef shopping list
- 3 tsp garlic, crushed shopping list
- 3 tsp ginger, grated shopping list
- 4 green chillies, finely sliced shopping list
- 250g (9oz) tomatoes, peeled and chopped (tinned tomatoes are good) shopping list
- 2 tbsp tomato puree (paste) shopping list
- 1 tsp garam masala shopping list
- half tsp turmeric powder shopping list
- half or 1 tsp chilli powder shopping list
- 3 tsp coriander powder shopping list
- 150g (5 fl oz) plain yoghurt shopping list
- pinch of saffron shopping list
- 6 cloves shopping list
- 6 black peppercorns shopping list
- 4 cardamom pods, opened shopping list
- 1 inch cinnamon stick shopping list
- handful coriander (cilantro) leaves, chopped shopping list
- salt to taste shopping list
How to make it
- Deep fry the onions and potatoes until golden brown - the potatoes do not need to be fully cooked at this stage. (note: I shallow fry rather than deep fry, but that's just because I'm scared of my deep fat fryer!)
- Remove the onions and potatoes and set aside.
- Put all ingredients into a large saucepan adding the onions and potatoes, mix, cover and simmer on a low heat for approx 1 hour, until beef is tender. (note: recipe calls for 1 hour cooking time but I usually cook for about 1 hr and a half, long slow cooking works best I think. Actually it's just occurred to me that this could work well in the crockpot, the potatoes would probably fall apart but meh! serving it with plenty of pilau rice nobody would notice anyway!).
