Greek-style Cold Quinoa Salad

- For the quinoa: shopping list
- 1 cup quinoa, rinsed shopping list
- 2 cups water shopping list
- dash kosher salt shopping list
- For vinaigrette: shopping list
- 2 tsp grainy mustard shopping list
- 4 tbsp olive oil shopping list
- 4 tsp balsamic vinegar shopping list
- 1 tsp (one little squirt) honey shopping list
- salt and pepper to taste shopping list
- Additional ingredients: shopping list
- 2 roma tomatoes, seeded and chopped shopping list
- handful flatleaf parsley, chopped shopping list
- 1/3 cup pine nuts, lightly toasted shopping list
- 1/3 cup feta cheese, crumbled shopping list
- salt and pepper to taste shopping list
How to make it
- For Quinoa:
- Put quinoa and water into a saucepan with and add salt. Bring to a boil, lower to a simmer, and cook 18-20 minutes, til water is gone and quinoa is tender.
- For the vinaigrette: Mix all ingredients together in a small bowl.
- Prepare extra ingredients, and toss everything together.
- Check for seasoning, add extra salt, pepper, and extra olive oil if desired.
- Garnish with parsley and extra feta.
