  Thanks for the enthusiastic comment re: brined pork tenderloin. I use that one as a 'go-to' for company... it never fails me and it really is SO easy! Hooray for our society finally backing down on that overcooked, DRY pork. Anyway - hope you're getting an early spring in New Hampshire!
