Peanut Butter and Banana Pupcakes

Yesterday was a special day in this house.  Black Lab #4, my Ruby, turned 10! When your a dog in this house and you make it to 10 years of age, that calls for a celebration! And if you know me personally, you'll know that one of my favorite ways to celebrate a birthday is with cupcakes! So, PUPcakes it was.

These are so easy to make and you probably have all the ingredients on hand.  For the cake I used a super-ripe mashed banana and some applesauce as the base of the wet ingredients.  If you don't have one of those ingredients, pumpkin purée or smoother puréed fruit would be fine. You might even stroll down the baby food isle. (I really don't think your doggers will be too picky.)  The frosting is simple a 1:1 ration of cream cheese and peanut butter (I just used traditional peanut butter, not the natural or organic).  I don't know one dog that doesn't like peanut butter.  As for the garnish, it's just Milkbones and finely chopped bacon because I felt like getting fancy and let's face it, even in the dog world, bacon makes everything better.  

Now, I made these treats for my dogs, but really, there isn't anything in the cake that a human couldn't eat outside of any allergies.  In fact, when my husband walked in he saw them on the table and asked if he could eat one.  I said sure, but you might want to take off the Milkbone first😂.

There was a lot of smelling and drooling as I was making these, but if they could speak, I think they would say the wait was worth it!

Goo Goo Cluster Cupcakes

If you've been following me through my posts or on Facebook the last few weeks, you'll remember that my husband I recently took a road trip to Nashville, TN.  And...I have found my new home!  It was my first time there and I immediately fell in love.  Even my Midwestern-born and raised husband said, "I could get use to this."  

After a 7 1/2 hour car ride down I-65 (ugh-I really don't like that stretch of road through Indiana), we were famished.  So, we headed straight to the The Southern for a few good eats and beverages.  The fried shrimp BLT and the oysters did not disappoint. Then, we walked across the Cumberland Pedestrian Bridge and back which was quite the accomplishment for someone who is deathly-- and I mean deathly, afraid of heights🙋🏼.  

Next up was a walk down 2nd Ave.  There was a painted brick wall to my left that said-- go get a Goo Goo. I looked to my husband and asked, "What's a Goo Goo?".  He then preceded to tell me about the political "Goo-Goos" or government guys in Chicago.  I politely listened (as I usually do) and then turned the corner to investigate The Nashville Goo Goo.  

Goo Goos are historical Nashville confections.  They consist of a marshmallow nougat candy, topped with caramel, salted peanuts and chocolate.  Jaws are cracking. When you have all those flavors and textures in one treat, what is not more to love? Well, a recipe combining said flavors with a simple warm baked good and a generous scoop of vanilla ice cream.

Can't get to Nashville for a Goo Goo?  They are sold at your local Bed Bath and Beyond, as well as Cracker Barrel (I looked it up).  If you are ever in Nashville for a Goo Goo or a night out on the town, head to the Grand Ole Opry.  We had a great time!

Red Velvet Cupcakes with Cream Cheese Frosting

Cupcakes. They've been the subject of TV shows, blogs, commercials, cult utopian communities, etc. It seems that those in the know have relegated the cupcake to the dustbin of food history. To that I say, "Really?!?"  First of all, cake is good and is never going away.  That is a fact I can be pretty sure of.  Secondly-- Do any of these culinary trend setters have kids?

I have a first grader (and a six and seventh grader) that needed a treat for Valentine's Day.  That calls for a compact goody.   I make cupcakes out of the house for local customers that are in need of tasty cakes (more on that can of worms at a later time).  Whether it is a charity event, a school birthday treat, or a house party, the fun and versatility offered by a cupcake is unmatched.


Now let's talk about these ruby jewels.  Red Velvet-- you are either in the "eh" or the "yes, please" category.  Those that are in the "eh" are generally disappointed with the lack of cocoa flavor. But a true red velvet is not about the cocoa.  It is simply a really tasty red cake.  And with a sweet cream cheese frosting that is further flavored by some marshmallow fluff, I am most certainly in the "yes, please" category!
