Pumpkin Roll Cake




Ingredients :

  • 3 eggs
  • 1 cup white sugar
  • 2/3 cup canned pumpkin
  • 1 teaspoon lemon juice
  • 3/4 cup all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 cup chopped walnuts
  • For Filling : 
  • 6 ounces cream cheese, softened
  • 1 cup confectioners' sugar
  • 1/4 cup butter, softened
  • 1/2 teaspoon vanilla extract

Directions


  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a mixing bowl, beat eggs on high for 5 minutes. Gradually beat in white sugar until thick and lemon-colored. Add pumpkin and lemon juice.
  3. In another bowl combine flour, cinnamon, baking powder, salt, and nutmeg; fold into the pumpkin mixture.
  4. Grease a 15x10x1 inch baking pan; line with waxed paper. Grease and flour the paper. Spread batter into pan; sprinkle with walnuts.
  5. Bake at 375 degrees F (190 degrees C) for 15 minutes or until cake springs back when lightly touched.
  6. Immediately turn out onto a linen towel dusted with confectioners' sugar. Peel off paper and roll cake up in the towel, starting with the short end. Cool.
  7. Meanwhile, in a mixing bowl, beat cream cheese, 1 cup confectioners' sugar, butter, and vanilla until fluffy.
  8. Carefully unroll the cake. Spread filling over cake to within 1 inch of edges. Roll up again. Cover and chill until serving.

Pumpkin Cheesecake Bar

Filling:
  • 1 (8 ounce package) cream cheese, softened
  • 1/4 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
Batter:
  • 1 cup canned pumpkin puree
  • 1 cup sugar
  • 1 egg
  • 1/3 cup vegetable oil
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons pumpkin pie spice (see Note for substitution)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • optional 1/2 cup chopped pecan pieces
Instructions

  1. Preheat oven to 375°.
  2. Spray a 9x13" baking pan with cooking spray. Set aside.
  3. For the filling: With a hand mixer blend together softened cream cheese, sugar, egg, and vanilla until smooth. Set aside.
  4. For the batter: Combine the pumpkin, sugar, egg and oil in medium mixing bowl and mix until well combined.
  5. Stir in flour, pumpkin pie spice, baking powder, baking soda, and salt. Mix well to combine.
  6. Pour batter into prepared baking dish, and spread to cover bottom of pan.
  7. Add the cream cheese mixture over the batter. Cut through the batter with a knife to make a marbled effect w/ the cream cheese mixture in an up and down pattern. Repeat going the other way. When marbling make sure you don't go all the way to the bottom of the pan. Sprinkle with the chopped pecans if desired.
  8. Bake for 25 - 28 minutes or until toothpick inserted in the center comes out clean.
  9. Store in the refrigerator. Cut into squares.

Nastar (Nanas)



Nastar isi Nanas
Bahan:
  • 250 gram butter
  • 90 gram gula halus 
  • 3 butir kuning telur
  • 100 gram susu bubuk
  • 250 gram tepung terigu
  • 100 gram tepung maizena
  • 1 sendok teh vanilj ekstrak
Olesan:
- 2 butir kuning telur
- 1/2 sendok teh madu
- 1 sendok teh air
- 1 sendok teh minyak goreng

Selai nanas:
- 2 kaleng crush pineapple/1 buah nanas palembang, kupas, parut atau blender
- 200 gram gula pasir
- 2 batang kayu manis
- 3 butir cengkeh

Cara Membuat Selai:
Masak nanas, kayu manis dan cengkeh hingga airnya menyusut dan adonan agak lengket, masukkan gula pasir. Aduk hingga air habis, adonan menjadi selai dan bisa dibentuk.

Cara Membuat Kulit Nastar

  1. Panaskan oven 300F (150C).
  2. Siapkan mixer, kocok mentega, gula halus dan vanilli sebentar saja hanya agar lembek dan tercampur saja. Masukkan kuning telur satu persatu. Matikan mixer.
  3. Masukkan campuran tepung terigu dan susu bubuk sedikit demi sedikit, aduk dengan sendok kayu/spatula hingga tercampur rata. Bungkus adonan dengan plastik wrap dan istirahatkan adonan di dalam kulkas selama + 1 jam. Skip proses ini jika adonan anda cukup luwes untuk dibentuk. Penambahan maizena juga akan membuat adonan lebih padat dan nastar tidak mudah meleber kala dipanggang.
  4. Keluarkan adonan, bagi menjadi beberapa bagian. Isi adonan dengan selai yang telah dingin, bulatkan.
  5. Panggang di oven yang telah dipanaskan + 20 menit sebelumnya selama + 20 menit atau 3/4 matang. 
  6. Keluarkan dari oven, olesi dengan bahan pengoles seluruh permukaannya hingga rata. Kemudian panggang kembali kue hingga matang kuning kecoklatan, + 10-15 menit.
  7. Angkat dan dinginkan. Nastar siap disajikan.

Danish Butter Cookies


Danish Butter Cookies


Ingredients:
  • 2 sticks unsalted butter, at room temperature
  • 4 oz (1 cup) confectioner’s sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • 1 tbsp milk

Directions:
  1. Preheat the oven to 350 degrees F.
  2. Place the butter, confectioner’s sugar and vanilla in a large bowl, and beat with an electric mixer until it looks combined, light, and fluffy. Add the flour and salt, and mix until it’s crumbly and looks like it can’t be mixed more. Add the milk, then keep mixing, and the dough should clump together after about 15 seconds of mixing.
  3. Place the dough into a pastry bag fitted with a large star tip(1M Wilton), and pipe onto a silicone mat lined baking sheet. 
  4. Bake the cookies for 12-15 minutes or until lightly golden. 
  5. Let them cool completely

Reses Peanut Butter Cup Cookies




Ingredients
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup peanut butter
  • 1/2 cup packed brown sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 40 miniature chocolate covered peanut butter cups, unwrapped


Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Sift together the flour, salt and baking soda; set aside.
  2. Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well. Shape into 40 balls and place each into an ungreased mini muffin pan.
  3. Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

Oreo Stuffed Peanut Butter





Ingredients
  • 1 cup (2 sticks) unsalted butter
  • 1 cup peanut butter
  • 1 cup white sugar
  • 1 cup brown sugar, packed
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 1 package of regular Oreo cookies

Instructions
  1. In the large bowl, cream together the butter, peanut butter, and both sugars until smooth. Add eggs, one at a time, making sure each is fully mixed in.
  2. In a medium bowl, stir together the flour, baking powder, salt, and baking soda. Slowly stir in flour mixture, 1/3 at a time until completely incorporated. Refrigerate dough for 1 hour (I never wait that long, if at all).
  3. Preheat oven to 375 degrees. Line two baking sheets with parchment paper.
  4. Place 1 tablespoon of cooking dough on top of an Oreo cookie. Place a second tablespoon underneath. You want just enough dough to cover the Oreo so that your chocolate to peanut butter cookie ratio is equal. Gently press the dough down around the Oreo, sealing the cookie dough edges together so that no Oreo shows through. Transfer the cookie to a prepared baking sheet and repeat, leaving about 1 1/2 inches between each cookie.
  5. Bake for 8-11 minutes, or until cookies have just started to brown around the edges. Do not overbake! I like mine a little on the gooey side so 8 minutes is all I cook them. Cool on baking sheet for a couple of minutes, then transfer to a cooling rack. Store in an airtight container.

Peanut Butter Cookies with Reses Morsel




Ingredients

  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup peanut butter
  • 1/2 cup packed brown sugar
