This time of year presents perfect conditions for livestock, especially pigs. The weather is warm but not too warm, with the occasional thunderstorm to help keep the dust settled. The fresh spring grasses are loaded with nutrients that the pigs and cattle graze down as fast as they can. During the warmest part of the day, the pigs hide out in their shelters and take a nice long nap. They also lay in the wallow and enjoy the cool mud. When they wake up it is cooling down and they get up to eat again. Call me crazy but I can sense their content and happiness. Under these optimal conditions that pigs start growing at unbelievable rates. They will average 2 - 2.5 lbs of gain per day! The cows can easily gain 3 lbs a day on nothing but pasture grass. The pigs and cows finish out wonderfully with bright white fat loaded with nutrients marbled throughout their muscle. The deeply flavored pork has a delightful slightly beefy taste, a result of grazing the grasses. It is moist and tender and is so easy to cook as the marbling keeps the juices evenly distributed throughout.
This time of year is also a time that we start to fire up the grills and plan outdoor activities. We have gatherings, camp outs, family reunions, class reunions, vacations, and backyard parties. Of course most of the events are enhanced by good food shared with one another.

Beef and Ground Beef CSA Shares Available
For those who have been waiting for a Standard Beef CSA Share as well as a Ground Beef CSA Share, you can now order them on our website! These shares are a direct result of customer suggestions. As we continue to say, "We want to be your Farmer!" Please keep the feedback and suggestions coming.
A little about our new CSA Shares:
A Standard Beef CSA Share consists of 30 lbs of our grass fed beef and will include ground beef, steaks, roasts, stew meat, short ribs, etc... We will make every effort to distribute the cuts proportional to the yield of the animal. Due to the low yield of some cuts, not all CSA Shares will receive every type of cut available. However, we will make sure that each CSA Share contains a fair and proportional variety of cuts.
A Ground Beef CSA Share will simply be 30 lbs of our premium ground beef. Each package will contain approximately 1 lb of beef. This beef is no different than any of our other beef. We do not use cull or "retired" cows. Rather our ground beef comes from healthy young steers. We simply ask the butcher to grind all the meat rather than cut into the usual cuts of beef. Because our beef is grass fed you will enjoy lean and healthy beef that tastes like steak!
As with all our beef, our cows are treated humanely and grass fed (pasture raised) from start to finish. We don't feed our cattle any grain resulting in lower cholesterol, lower saturated fat, higher omega 3 fatty acids, and higher conjugated linoleic acids (CLA). Now on Facebook
We may be a little behind the times, but we are finally on Facebook! Several of our customers have suggested we create a Facebook page over the past couple of years. After it was (once again) recently suggested we decided it would be worthwhile. We hope to provide more frequent farm updates, as well as greater insight into our farm. Our iPhone will allow us to post right in the field providing close to real time updates. It is kind of interesting how our technology is changing farming. Can you imagine explaining this capability to farmers 50 years ago?! The thought makes me laugh!

CSA Shares Available!
We are pleased to announce that we are taking orders for CSA Shares once again!
We have come up with a new CSA option that we feel will serve both you, the customer, and us, the farmer, better.
Earlier this year, we offered 6 month and 12 month CSA Shares where we delivered 10 lbs of meat per month. We found that with the busy summer months, many customers have had a hard time meeting us because of vacations etc... This resulted in several extra deliveries and created a logistical headache as we tried to keep track of who had received their order and who hadn't. It also meant many late nights for us sorting and weighing shares for each order. During one of these late nights, Hollie and I were discussing ways we could be more efficient so that we could feel comfortable with increasing our CSA Share membership. (It is frustrating for us to have customers on a wait list.) After bouncing some ideas around we finally came up with what we feel is a good solution.
Rather than deliver 10 lbs of meat each month, we will now deliver 30 lbs at once. 30 lbs is still small enough to fit in most freezers as it only takes up 1 cubic foot. It also means fewer deliveries to coordinate. This helps frees up your schedule and ours. Our goal is to keep CSA Shares in stock, so that when you run low on meat, it is readily available for you to order or at least receive within a month or so. While we can't guarantee this, we will work really hard towards it. Another advantage is since you are only buying 30 lbs (or 3 months by our previous model) you aren't tying up as much money at once. Our CSA Shares will also make nice gifts.
As we approach fall and winter, we will offer two different CSA Shares.
Pork Share: 30 lbs of Berkshire Pork of assorted cuts of chops, roasts, bacon, ground pork, ribs, and ham. Cuts come wrapped and packaged in portions small enough for two people.
Combo Share includes: 15 lbs of Berkshire Pork of assorted cuts of chops, roasts, bacon, ground pork, ribs, and ham. Cuts come wrapped and packaged in portions small enough for two people.
15 lbs of Grass Fed Beef of assorted cuts of steaks (Rib, T-Bone, Round, and Sirloin), roasts, ground beef, stew meat, and ribs. All beef is dry aged to perfection and cuts come wrapped and packaged in portions small enough for two people.
