Heinz 57 Kabobs, Darn Good Baked Beans, Meatball Appy & Labor Day Weekend...

I'm guessing there will be a few BBQ's this weekend and folks might be looking for a little inspiration... May I suggest these Heinz 57 Chicken Shish-Ka-Bobs:@) Easy and very tasty, and if you're not inclined to skewer the kabobs, simply grill up some chicken breast and slather it with the sauce. Good stuff folks:@)

And one of my favorite side dishes are these Darn Good Baked Beans with Bacon and Brown Sugar. This is a very nice recipe that starts with three types of canned beans, and will appeal to most folks in the crowd.

Bringing the appetizer? These Three Ingredient Hawaiian Meatballs couldn't be easier. Heat in slow cooker, microwave, or in a disposable pan on the grill.

Whatever you are doing this Labor Day Weekend, whether firing up the grill (free apron pattern here), or going out to eat...

Heinz 57 Kielbasa Appetizer -Oven, Grill, or Microwave

These Heinz 57 Kielbasa Appetizers are a nice two ingredient munchie that can be made in the oven, quickly heated in the microwave, or tossed into a disposable pan on the grill for tailgating and summer bar-b-ques:@) You can probably make it in a slow cooker too, but I haven't tried that (yet). I love kielbasa and smoked sausage as an appy, it's something not everyone thinks of serving and I always have some in the freezer. The sauce is pungent and perky, and a nice change from BBQ sauce. Simply slice up the sausage, generously smother in Heinz 57, heat and eat-good stuff folks!

Heinz 57 Kielbasa Appetizers
Kielbasa or smoked sausage, cut into bite size pieces
Heinz 57
  1. Add meat to baking dish or disposable pan.
  2. Smother in sauce, bake at 350 for about 15 minutes or until meat is heated through. Or microwave at 20 second intervals until heated through. Or grill over medium until meat is heated through, stirring occasionally.
  3. Serve with food picks.

A1 Steak Sauce Beef Marinade

If you're looking for a last minute idea for the cookout, this A1 Steak Sauce Beef Marinade was pungent and garlicy, with just a tad of an oriental flavor profile. I used beef tips and let it marinade for a good six hours, it can go longer or shorter if desired. I cooked mine on the grill over medium/high heat and it made a very nice Sunday dinner:@) Tip: Don't use the special balsamic for this recipe, a cheaper version is just fine. For a robust marinade like this, I like to keep the grilled veggies a little more on the tame side, just olive oil, S&P...

A1 Steak Sauce Marinade-from here
1 C olive oil
1/2 C balsamic vinegar
1/4 C Worcestershire sauce
2 Tblsp A-1 Steak Sauce
1Tblsp soy sauce
3 large cloves garlic, minced
1 tsp salt
1/2 tsp pepper
  1. Add everything to zip top bag, mix well.
  2. Add beef and place in refrigerator, let marinate at least 4 hours to overnight.
  3. Grill or cook as desired.

Garlic Grilled Zucchini or Grilled Sheet Pan Dinner & Sporty Barbie Shirt

Sometimes we try too hard folks, yep, it's true. Most of the time the best things, are honestly the easiest things. This Garlic Grilled Zucchini is a very good example. Simply cut thick chunks of zucchini and onion (maybe some peppers if you have them), give a very liberal dose of Italian salad dressing, and add a clove (or three-you know your crowd) of garlic that has been put through a garlic press. Very flavorful and a big hit at Sunday dinner:@)

Or how about making it an easy Grilled Sheet Pan Dinner by adding some quick cooking boneless chicken breast. A perfect dog days of summer meal that cooks up in no time:@)

Garlic Grilled Zucchini
Zucchini, thick chunks
Onion, thick chunks
Italian salad dressing
Garlic clove, pressed
  1. Add everything to zip top bag, marinate for at least one hour.
  2. Cook over medium hot grill for about 5-8 minutes, stirring occasionally.
  3. Sprinkle with S&P once off grill.

Ham & Peach Kabobs, Lemonade Cucumber Salad & French Beret for Barbie

Peaches are abundant right now and these Ham and Peach Shish-Kabobs make a fun and very tasty meal. I also like that folks don't generally think of ham for the grill. But I promise you, it's seriously a match made in heaven:@) 

How's your garden doing (or neighbor's, or farmers market), got cukes? This Fresh Lemonade Cucumber Salad was truly different, and very refreshing. Every lemon lover will approve:@)

Google tells me that the two months most traveled to France are July and August... Let's send our Barbie off for vacation in style with this Felt Beret free pattern here. I think she'd like it:@)

Zucchini Season!!! And my favorite grilled zucchini recipe...

Ding-ding-ding... Let the Zucchini Games begin:@) It's always an exciting time when the garden starts producing zucchini, and this year's official date for picking the first one was 6/6/24. 

You can see the stakes, this year's garden experiment is vertical zucchini... Here I have the first two straps holding it to the pole. So far I like this idea:@)

I can already tell I don't have enough of the velcro and may be switching to what I'm joking is Redneck Gardening and using duct tape๐Ÿ˜ƒ The plant on the right -might- be allowed to sprawl into the yard, we will see. 

And the first zucchini was growing straight down and literally buried itself 1/2" into the dirt... Since I'm always trying to find more uses for k-cups, yep, I rested the zuke on one, it elevated it off the ground and worked great:@)

What to do with these over-achieving garden gifts? I highly recommend this Curried Honey Mustard Marinade for Grilling. In over 14 years of blogging, this is (to date) my favorite way to serve zucchini and yellow summer squash as a side dish. Grilling Season! Pineapple Marinade, BBQ Sauce Pineapple Slices & Pina Colada Carrot Salad

I thought we'd kick of grilling season with a little round-up of pineapple recipes, sound good? Good:@) Let's pick up a can of sliced pineapple and use the juice in this three ingredient Pineapple Marinade for Chicken or Pork. It's a quick marinade that's a little sweet, a little savory. It's good for kabobs or bigger pieces of meat.

As for the slices, let's grill them too... This Savory Grilled Pineapple with BBQ Sauce makes a great side dish that's a little unexpected. Simply use your favorite bar-b-que sauce. Even if you opt out of the sauce, toss some slices on the grill to get a nice char. Good stuff folks!

If you happen to reserve a slice or two, dice it and add it to this Pina Colada Carrot Salad for a refreshing side dish:@) This salad would be perfect with any grilled meal, and is extra easy if you start with store bought shredded carrot.

New Items -Dollar Tree Alert!

Popping in to share a few things that caught my eye over the weekend at Dollar Tree... Parchment Paper Liners for Air Fryers. A great idea to help with clean-up if you cook fish or chicken breasts in your air fryer. As with everything, some packs had 20, some 15... Shrinkflation...

Dollar Tree canning lids, I can only say, I've used them and so far, no complaints. I've tried both hot water bath canning, and by turning the jars upside down for 15 minutes, the jars sealed fine. Just sharing my personal experience with the little bit of canning I do these days...

Do you, or does someone in your group, grill with charcoal? DT has some Kingsford Herb Flavor Booster Briquettes. They would be fun to play with on a lazy Saturday or Sunday... And maybe a little something extra to add to the Father's Day gift.

And finally, it's not often we talk house cleaning here a PIM, but I'm smitten with these little Chiffon Dusters. They easily scoot around bookcases and into corners, and would probably work well for car dashboards too. They are written up to be washable, as of this writing I haven't tried that yet.

Garlic and Thyme Marinade for Beef & Broiler Grilling

I couldn't wait to do some grilling out and decided to treat myself to shish-ka-bobs... The thyme in the raised bed was beautiful and in need of a little trimming, so I tried this Garlic & Thyme Marinade for Beef. This is a good one folks, although it will be thick, so be sure to massage it into all of the meat:@) I could taste every ingredient, and it was nice to use my home grown thyme. Please give yourself lots of time for marinating, the longer the better for a big burst of flavor, even when meat is cut to kabob size. Did I fire up the grill? Unfortunately Mother Nature literally rained on my parade and added in gusting winds as an explanation point. So the cooking method was on to Plan B... 

As for broiler grilling, it works well, but we do need to be prepared for some smoke in the house. I heated the broiler to 525 degrees and placed the rack into the highest position (as close to the broiler as possible). My kabobs went onto a heavy duty sheet pan. I would loosely use these times: About 3 minutes each turn, turning the kabobs three times for rare. About 3 minutes each turn, turning the kabobs about four times for medium/well. My best tip: You might want to have a piece of meat on the pointed end of a few kabobs to easily pull off to check for desired doneness.

Garlic & Thyme Marinade for Beef-from Beef It's What's for Dinner
1/4 C olive oil
3 Tblsp red wine vinegar
3 Tblsp chopped fresh thyme -or- 1 Tblsp dried thyme
2 Tblsp sweet or smoked paprika
3 tsp minced fresh garlic
1/4 tsp ground red(?) pepper-I used black pepper
  1. Add marinade ingredients to zip top bag.
  2. Salt and pepper your beef, add it to bag. 
  3. Marinate for at least 6 hours in refrigerator, turning occasionally, you can marinate overnight. 
  4. Grill as desired.

Guy Kabobs, aka Tailgating on a Stick -Easy Meat Football Appetizer

Ok, I admit I'm channeling my silly side here, but I do have to say, these Guy Kabobs, aka Tailgating on a Stick, would be the perfect appy for a football party or tailgating any sports event. In my experience, guys don't tend to gravitate towards the veggie tray, I'm just sayin'... So I thought we'd make a little meat skewer that's easy finger food, and gives everyone a taste of all of our grilled favorites. And the best part, we're using all pre-cooked meats that only need to be heated up in the oven, in a skillet, or quickly tossed on to the grill... No room for error. We like that:@) I actually used my George Foreman Grill today. My best suggestion: Do yourself a favor and add more pepperoni, yep, trust me and just add more pepperoni, it was my favorite bite...

If you line all of the meats up in the same order you can easily run a line of condiment over each different meat. I like to pool a little on each end of the platter so folks can dip the skewer into more while picking it up if they'd like to. I'd also put the bottles out for an extra squirt too. I used BBQ on the kielbasa, ketchup on the meatballs, and mustard on the hotdogs. You know what your crowd likes...
Want to be a little fancier, or make more of an appetizer size? Make mini kabobs, maybe three pieces of meat on each. 

Guy Kabobs-aka Tailgating on a Stick
Frozen meatballs, thawed
Hotdogs or cocktail franks, if hotdogs cut into 4 pieces
Smoked sausage or kielbasa
Pepperoni slices, about 1/4" thick-lots of pepperoni...
  • Alternately skewer meat, cook or grill until charred and heated through. Serve with condiments of choice.

Grill Pan Chicken Ratatouille

This Grill Pan Chicken Ratatouille is another one of my quick, meals don't need to be complicated, suggestions folks:@) And the best part, it uses all of our summer veggies. The zucchini, eggplant, peppers, tomato, and basil are out of my garden! I'd say from prep to plate this takes about 30-40 minutes. Italian dressing adds a lot of flavor, and this will be a substantial meal. And if you have it, a drizzle of good balsamic vinegar right before serving will take it right over the top! If you'd like to add a starch, I think rice would be perfect. Don't hesitate to fire up the grill for this easy meal folks, I don't think you'll be disappointed.

I planted Little Fingers Eggplant this year, the write-up:  
68 days from transplant. This is the best open pollinated oriental eggplant available. Little Fingers eggplant seeds produce long and thin eggplants with glossy dark purple skin. You will see heavy yields of nearly straight fruits that are 4 - 5” long by 1 - 2” wide, set in clusters of 3 - 6. The creamy white interior offers a smooth taste and few seeds. Tender, thin skins do not require peeling or salting before cooking. Grill whole.
It is a hearty little plant:@)

Grill Pan Chicken Ratatouille
As much as you'd like:
Boneless chicken breast, cut into bite size pieces
Onion, large chunked
Bell peppers, chunked
Zucchini, chunked
Little Fingers Eggplant, 1/2" sliced
Italian Dressing
Tomatoes, large chunk
Fresh Basil, chiffonade
Good balsamic vinegar-optional
  1. Heat grill to high, add grill pan while heating.
  2. Add chicken, onion, peppers, zucchini and eggplant to large bowl or (even better) zip top bag.
  3. Drizzle with enough Italian dressing to cover everything.
  4. Toss into grill pan, reduce heat to medium/high.
  5. Let sit for a couple minutes, stir. Cook for approximately 10-15 minutes or until chicken is cooked through. During the last 5 minutes or so, toss tomatoes into the grill pan too.
  6. Add to platter, drizzle with more salad dressing, sprinkle with basil, and drizzle with balsamic vinegar if desired.

Grilled Zucchini with Italian Dressing and Parmesan Cheese

This Grilled Zucchini (and/or Summer Squash) with Italian Dressing and Parmesan Cheese is the perfect side dish while grilling out. It only calls for three ingredients, and they are pretty much pantry ingredients for most of us. I mentioned previously that at the beginning of grilling season I like to buy a new bottle of inexpensive Italian salad dressing to use for a quick marinade or flavoring. I used that as the oil for grilling and gave the zukes a nice hearty sprinkle of parmesan cheese once off the grill-done!  

This is the type of side dish that has folks saying, I never thought I'd like zucchini:@) Just make sure you don't over cook it... Pull it sooner, rather than later.
While I'm not adding it below, 
if you have some extra onion,
that would be a nice addition too:@)

Grilled Zucchini with Italian Dressing and Parmesan Cheese
Cut zucchini and summer squash into a generous size 1/2" chunks
Italian dressing-your favorite brand
Grated parmesan cheese, the kind in the can
  1. Add squash to bowl or zip top bag and top with enough Italian dressing to coat well.
  2. Heat grill to hot. I like to add my grill pan as it's heating up.
  3. Toss squash into pan and grill medium/hot for about 5-8 minutes or until desired doneness. We like it to still have some crunch and bite.
  4. Add to bowl or platter, add extra shake or two of salad dressing, and sprinkle generously with parmesan cheese.
  5. Add S&P to taste if desired. I didn't add any.

Grilled Frozen Cauliflower with Sweet Chili Sauce

I was blown away by this side dish folks, ~absolutely loved~ it! This Grilled Frozen Cauliflower with Sweet Chili Sauce couldn't be easier, and is very economical. A 12 oz bag in the frozen foods section is still less than $1.25, and I even found my chili sauce at Dollar Tree:@) I literally tossed the veggies into a bowl, added a drizzle of olive oil and then tossed them straight into a hot grill pan. I only ended up with minimal charring because I used a ceramic grill pan, metal would have added more caramelization. The grill added some smoky flavor, and I added a little chili sauce about two minutes before removing from the grill. Easy-peasy.

Add a little more sauce before serving...
Good stuff folks:@)

Grilled Frozen Cauliflower with Sweet Chili Sauce
  1. As much cauliflower as you'd like.
  2. Drizzle with olive oil and give it a toss.
  3. Add to hot grill pan.
  4. Grill medium/hot for about 8-10 minutes, stirring occasionally.
  5. Shake on some sweet chili sauce last 2 minutes or so.
  6. Add to platter and shake on some more sauce.

Teriyaki Grilled Pork Tenderloin and Grill Pan Vegetables -Homemade Teriyaki Sauce & Barbie's 4th of July

My crew is in agreement, the best way to cook a tenderloin is on the grill, and we have several different types of homemade marinades here on PIM. But an old favorite is this Teriyaki Grilled Pork Tenderloin with Grill Pan Vegetables. Once you make a homemade teriyaki sauce, I don't think you'll ever go back to the bottle folks:@) And I do like to leave the meat marinate overnight, longer is better! As for what vegetables to grill, peppers and onions are a must, from there anything goes... Zucchini, yellow squash and broccoli are all good options.

This truly was a lovely meal,
and a nice way to use up some snow peas from the garden:@)

Teriyaki Sauce
1/4 C soy sauce
1/4 C vegetable oil
1 clove garlic, minced-I use a garlic press
1 tsp ground ginger-Pick up a new jar if you've had it for a while
1 Tblsp molasses
~Mix well

For Dinner:
One unflavored pork tenderloin
3 large bell peppers, colors of choice, large chopped
1 large sweet onion, large chopped
1 small zucchini, 1/2" chunks
20 oz can pineapple chunks, drained
handful snow peas, optional
  1. Add teriyaki sauce to large zip top bag and add tenderloin. Place in refrigerator for at least 4 hours and preferably overnight.
  2. Heat grill to medium high.
  3. Remove meat from bag, place on plate. Add vegetables to bag and coat in sauce.
  4. Grill meat: Think of it as a rectangle, 4 minutes on each side. Remove to carving platter, cover with foil for 10 minutes.
  5. Towards end of cooking time add vegetables to heated grill pan. Stir occasionally until cooked to your desired level of doneness.
  6. Add veggies to serving platter, add carved meat and pour any juices over everything.

Quick Barbeque Baked Beans

I have a few recipes for baked beans on the blog, but I wanted to try this one because it literally comes together in a couple minutes. I also liked that it's intended to be heated on the grill, perfect for summer or tailgating. But I did use the oven this time. Even though it only calls for a few ingredients, these Quick BBQ Beans do have a lot of flavor, and I'll offer a tip or two to help add your own touch if desired. These beans use pantry items, offer a faster option for a side dish, and were a big hit with my crew:@)
Want them sweeter? Add more brown sugar.
Want them spicier? Add some hot sauce.
Want intense flavor? Add extra BBQ sauce.
But I do suggest mixing the recipe as is and trying them first:@)

Other BBQ Beans recipes:

Quick Bar-B-Que Baked Beans-from Taste of Home
15 oz can kidney beans, drained and rinsed
15 oz can great northern beans, drained and rinsed
15 oz can baked beans
1/4 C BBQ sauce
2 Tblsp brown sugar
2 tsp prepared mustard
  1. Mix everything, add to baking dish or 8" disposable pan.
  2. Cover pan and place on grill for 15-20 minutes, or until heated through. 
  3. Alternately: Add to 350 degree oven for about 30 minutes, or until heated through. -Or- simply add everything to pot and heat on stove top.

Buffalo Chicken Popper Tortilla Bowls -Appetizer

I love the tortilla chips that are shaped as little bowls. They make fun individual snacks, and um.. Ensure no double dipping:@) They come in national brand names, and even Walmart's Great Value offers these chips for about $2 a bag. I whipped up a super simple snack, Buffalo Chicken Popper Tortilla Bowls. Pepper Jack cheese, shredded cooked chicken and your favorite buffalo sauce. I used the oven for these, they can be heated up on the grill too, we're only aiming to melt the cheese.

Sometimes I just drop a cheese cube in each one,
add some chicken,
and shake Frank's on top.
If making for others or a party,
I'd mix the chicken and hot sauce before filling the bowls.
The beauty of this is,
you can make as many,
or as few, as you'd like:@)

Ummm, melty cheese...
The easiest way to fill the bowls
would be to mix shredded cheese and chicken
with the hot sauce first.

Buffalo Chicken Popper Tortilla Bowls
  • For each tortilla:
  1. Add cube of pepper jack cheese.
  2. Mix shredded chicken with your favorite hot sauce.
  3. Stuff the bowls with chicken.
  4. Alternately: Mix shredded cheese and shredded chicken with hot sauce and fill bowls.
  5. Bake at 350 degrees for about 10  minutes, or until cheese has melted. -Or- Place on disposable foil pan, place on heated grill over indirect heat for about 10 minutes.
  6. Add extra shake of hot sauce out of the oven.
  7. Garnish with chives if desired.
  8. Serve with pickled jalapenos.

Grilled Lemon Asparagus

The asparagus looked good at the store so home it came:@) I'm always interested in trying something just a little different, so I made some Grilled Lemon Asparagus. I simply let one bunch of cut asparagus, and some onion, marinate for about 30-45 minutes in the juice of one freshly squeezed lemon and some olive oil. Then tossed it into a hot grill pan. While subtle, the lemon flavor was there, and this made a nice side dish for Sunday dinner.

Grilled Lemon Asparagus
1 bunch asparagus, washed, trimmed and cut into pieces
1/2 large onion, cut into large chunks
juice of 1 lemon
1 Tblsp olive oil
Lots of freshly ground black pepper
Salt for serving
  1. Mix everything except salt in bowl. Let marinate at room temperature for 30 minutes to 1 hour.
  2. Right before cooking, add pinch of salt, stir and pour into a medium hot grill pan.
  3. Cook for about 8 minutes or until desired doneness, stirring occasionally.
  4. Add sprinkle of salt before serving.

War Pig BBQ Sauces & Dry Rubs for Grilling and More -Review

I had to chuckle when the folks from War Pig BBQ reached out to see if I'd like to try their line of specialty BBQ sauces and dry rubs, it sounded like a match made in heaven:@) The product line started after an Army veteran began entering (and winning) grilling competitions. Each flavor has a fun name that's a play on words, and they give back to the armed forces community by contributing a portion of sales to three charitable causes. A great product line started by great people!

While it's true that I do my fair share of grilling, I decided to try something a little different since not everyone BBQ's. I heated up the SNAFU flavor -Situation Normal All Fowled Up- on some leftover chicken, and made a nice hearty sandwich. A crock pot of shredded BBQ chicken would be great as the weather begins to cool off. I also think this sauce would be very good in chili.

SNAFU is a chipotle, pineapple, and orange flavor profile,
with a little sweet heat.

Much like hot sauce,
if you enjoy BBQ sauces you probably have a few bottles in the fridge...

Mozzarella Stuffed Hungarian Wax Peppers

This Mozzarella Stuffed Hungarian Wax Peppers post is all about using up what the garden gifts us, and turning it into a very nice meal if I do say so myself:@) This year I planted sweet wax peppers, and I wanted to pick the first few so the plant would continue to make more. This is a good meatless meal, and you could even make it in a disposable tray on the grill. Or consider it an appetizer, maybe one large pepper per person (these were about 7-8"). Use your favorite pasta sauce, and you're all set! After I took pics I did decide to sprinkle them with grated parmesan cheese. 

If you have the time you could 
give them a couple minutes under the broiler to brown the cheese once out of the oven.
But I, um, wanted to eat:@)

To clean the peppers I cut a T, horizontally across the stem end, but not all the way through the pepper. Then vertically down the length of the pepper. Gently pried the pepper open a bit, then used the small end of a melon baller to remove the seed cluster. Turn pepper open side down, hold over trash can and give light tap to shake more seeds out. If you see a membrane left, try to pull it out, but I didn't worry about it too much.

I usually have shredded mozzarella in the fridge, and just kept stuffing it down towards the point of the pepper. If you have some string cheese, that would even be easier. Or maybe buy a block of mozzarella and cut strips. 
Ready for the oven:
My sauce: I just poured a little tomato sauce in dish
and sprinkled with Italian seasoning, garlic and onion powder, and S&P.
The house smelled ~really good~ while they baked folks:@)

I don't see why sweet peppers couldn't be pickled too!

Mozzarella Stuffed Hungarian Wax Peppers
  1. Wash, dry, and clean seeds and membranes from peppers.
  2. Stuff with mozzarella cheese.
  3. Pour a little sauce in the bottom of a baking dish.
  4. Add the peppers.
  5. Cover with foil and bake at 350 degrees for 30 minutes to 1 hour. Depends upon how you like your veggies... Wax peppers have thinner walls, I checked them at 30 minutes, they had a little resistance. I removed them from the oven at 45 minutes. Cook longer if you'd like them softer.
  6. Spoon sauce over peppers for serving.
  7. Sprinkle with grated parmesan cheese.
