Alpukat Kocok (Whipped Avocado)

Dessert with avocado is very popular in Indonesia, this one is no exception. Many different toppings used, this time I used chocolate sweet condensed milk. Easy and yummy👍

It's really simple to make this. You just need a ripe avocado, crushed ice and topping you like

I used hand blender to whip the avocado, leave some chunks for texture, place at the bottom of a cup or glass or bowl, add crushed ice and lastly, drizzle topping. Mix everything just before consuming

Other popular options for topping are Nutella, Ovomaltine, and Milo. I personally like to mix in with a tiny bit of hot water so it's easier to drizzle

Note: the quality of avocado used is crucial here, I love to use Indonesian butter avocado, so creamy and tasty I can say it's the best kind of avocado ever👍

Mango & Avocado Salsa

Easy and so refreshing! I can't stop eating this. Yum yum :)




What you need:

1 avocado, pitted and diced
1/2 mango, peeled and diced
1/2 Japanese cucumber, halved and sliced
10 cherry tomatoes
1 red onion, peeled and diced
a handful of coriander leaves, chopped
juice of half a large lime
salt and black pepper to taste

Method:
  1. In a bowl, put together all ingredients and mix well
  2. Refrigerate before serving

Thai Style Prawn Avocado Rice Vermicelli Soup

This unique dish is surprisingly so good!
Inspired by Thai dish, tasty coconut base soup with a hint of sourness eaten with crunchy prawns and the green vegetables, added with the creamy avocado, slurping the noodles too at the same time

Recipe is from Café Delites

What you need:

500g prawns, deshelled and deveined
1 tbsp coconut oil
2 cups chicken / vegetable stock
2 cups light coconut milk
some baby bok choy, cut
2 stalks of spring onion, sliced
4 kaffir lime leaves
1 lemongrass, peel the outer layer and halve
2 garlic cloves, finely chopped
1/2 cup cilantro, roughly chopped
1 tbsp soya sauce
2 tsp fish sauce
a pack of rice vermicelli, prepare as instructed (I used brown rice vermicelli)
1 avocado, chopped
lime wedges, to serve
1/2 tsp crushed red chili flakes (optional, I didn't use)

Method:
  1. In a large deep pan, heat coconut oil and pan fry prawns til changed color and just cooked through. Remove from heat and set aside
  2. Using the same pan, pour both chicken stock and coconut milk, bring to boil and let it simmer. Add in garlic, lemongrass, spring onion and lime leaves. Followed by soya sauce, fish sauce and half of the cilantro. Lastly, add in bok choy
  3. Arrange cooked rice vermicelli in serving bowls. Scatter avocado and pour the soup over it and then sprinkle the remaining cilantro. Season with lime and serve immediately

Yummy hearty meal. Adding chopped red bird's eye chilies would be even better. Regretted for not doing that haha..

Easy Avocado Banana Coffee Pudding

A month hiatus after a couple of weeks rough thunderstorm in my life, I guess it's time for me to live
It's gonna be different from now on, and nobody say it's going to be easy
There are still more days of sorrow than joy and more nights of tears than peaceful sleep
But I have to gather my strength and learn to live with it, one day at a time
 
 
Okay, let's start with this
Still not in the mood for something complicated so here's one easy delicious dessert, not to forget considerably healthy


 
 
What you need:
 
1 ripe avocado, pitted and peeled and cut into chunks
2 medium (or 1 extra large) over ripe banana, peeled and cut into chunks
25g packed light brown sugar
60ml fresh milk
1 tsp instant espresso powder
1 tsp vanilla extract
a pinch of salt
1 tbsp agar agar powder
 
 
Method:
  1. Mix milk, espresso powder, brown sugar, vanilla extract, salt and agar agar powder in a mug and stir well til all dissolved
  2. Using Bosch MaxoMixx Hand Blender's blender attachment add in avocado, banana, and coffee mixture and blend til smooth (I used speed 2)
  3. Transfer to a small pot and bring to boil, stir continuously
  4. Transfer to ramekins and chill in the fridge




I kept them in the fridge overnight for maximum result which a good decision
I enjoyed this soft pudding so much. Try it and hope you enjoy it as much as I do :)

AFF Philippines - Abokado At Condensada

This dessert is apparently loved by Pinoy
It uses the same ingredients as Indonesian's avocado juice - avocado and sweet condensed milk, it's only that Indonesians use chocolate sweet condensed milk (which I can never find in Singapore)
The difference here is that for this dessert, the avocado is in chunks

This is the basic typical avocado with condensed milk dessert:


 
 
No recipe for this. It's only cut avocado drizzled with sweet condensed milk. Original recipe uses so much of the sweet milk that it's like soaking the avocado. I just couldn't do it, it's just way too sweet for me, so I just drizzled a little bit over the cut avocado
 
After making banana-que and kamote-que, and then this dessert, I find that Pinoy really has sweet tooth! :)
 
Now, there are some variations in serving this dessert. Some add chocolate cream. Others serve this as a smoothie by blending it with ice cubes and fresh milk
So, I had mine too! :)
 
Cut avocado
 
 
 
Pour a little sweet condensed milk
 
 
 
Pour fresh milk (I used reduced sugar soya milk)
 


Stir stir stir...
 
 
 
Pour a little chocolate sauce



Stir again and voila!
 
 
 
This is yummy but then again, as I mentioned before, it's really too sweet! :)
