6 Restorative Miso Soups for Souper (Soup, Salad, & Sammie) Sundays

It's becoming a habit to laze through Sundays versus make a new soup. I expect I will be out of my funk soon and back to regular soup making but until then, here are some favorite miso soups to keep you company.

I make miso soup frequently on weeknights--whatever leftover veggie I have available, sometimes just the broth when I feel in need or restoration. Sometimes things get a little fancier and here are soups that prove that

Mark Bittman's Simple Miso Soup with Tofu, Mushroom and Noodles is nourishing, satisfying and delicious: 


Heidi Swanson's Turmeric Miso Soup with Tofu and Chunky Vegetables is bright, tasty, and perfect for fall:





If you are wanting a tofu alternative, Nigel Slater's Miso Soup with Prawns and Green Tea Noodles fits the bill, and you could replace the shrimp with chicken too:


And Donna Hay's Udon Noodles with Tofu & Asparagus in Miso Broth is simple, mellow, and comforting. 


And finally, my own Simple Miso Soup with Chickpeas and Pasta is not at all traditional but quick and easy when you need a mock chicken soup:


You can't go wrong with any of these soups plus the many others that use miso on the blog!

Five Potato Soups That I Love for Souper (Soup, Salad, & Sammie) Sundays

I won't bore you with why I didn't make soup today--although a lack of sleep and the fact I took a two hour nap at 10:00 AM played a roll.  I even had a soup lurking around in my head to make, a variation of potato soup and I am planning on making it soon. Until then, here are some fabulous potato soups from our I Heart Cooking Clubs featured chefs to enjoy!





Jamie Oliver's Baked Potato Soup is simple, rich and satisfying and great with blue cheese sprinkled on top:




And you can't go wrong with Ruth Reichl's Hot Vegetarian Vichyssoise (I made it vegan):


All of these are great potato soups and you can find manymore by searching for "potato soup" on my blog. Since it's a favorite comfort food I make variations of it a lot!

Tina of Squirrel Head Manor shared Nigella Lawson's recipe for Chicken Cosima, a stew, saying, "This one is highly recommended. A healthy dish which is easy to prepare and easy on the budget. If you like sweet potatoes and chickpeas I think you will enjoy this recipe. Grab a spoon and ladle up a serving or two!"


Judee of Gluten Free A-Z Blog brought Baby Spinach and Kale Soup--Oil Free and said, "My first fall soup of the season is simple, green and soothing. It's easy to make in either the Instant Pot or on the stove top, and it is nourishing, filling, and tasty. I used a frozen spinach and kale mixture (from BJ's), but it I've seen similar fresh mixtures in the produce isle for baby spinach and baby kale. Frozen or fresh greens will work perfectly in this recipe."

6 Favorite Corn Chowders to Hold on to Summer for Souper (Soup, Salad & Sammie) Sundays

The end of summer is approaching, if not seen through the weather, at least seen on the calendar pages. Chowder, especially corn chowder is a great way to hold on to summer, while welcoming the fall. 

Here are 6 great corn chowders to enjoy. I have countless chowders and corn chowders on the blog so I whittled down the list by choosing ones by our I Heart Cooking Clubs featured chefs and keeping them vegetarian. 

I added hominy to Mark Bittman's Basic Corn Chowder and it was a great addition to the texture of this simple classic: 


Yotam Ottolenghi's Sweet Corn Chowder with Spiced Butter is elevated with the sexy spiced butter:





Another great Mark Bittman recipe is this hearty Corn-and-Cheddar Chowder:



Jacques Pépin's Corn and Hominy Chowder is quick, colorful and tasty:


Finally Donna Hay's Cauliflower and Corn Chowder is unique and delicious:

Judee of Gluten Free A-Z Blog shared this pretty and refreshing Fresh Corn and Blueberry Salad. She says, "Got corn on the cob? Talk about an unusual yet tasty salad! Sweet corn and sweet blueberries mix beautifully in this colorful summer salad. ... It is simple to make, gluten-free, oil-free, parve, and vegan."


Tina of Squirrel Head Manor brings a Hummus Sandwich this week saying, "I am a big fan of hummus so I thought, why not make a sandwich with it.  This is a spinach artichoke and sun dried tomato blend. ... Spread this on toast with sliced tomatoes. A fast and healthy lunch alternative."


And Kim of Stirring the Pot shared Curtis Stone's Favorite (& Healthy) Potato Salad saying, "When you pour the broth over the potatoes and stir, the potatoes become flavorful and creamy all on their own. This means it is only necessary to use a very small amount of mayo. I have to say, I was really impressed with this method and couldn't believe how creamy and "classic" this potato salad looked and tasted."

Donna Hay's Cauliflower and Corn Chowder for Souper (Soup, Salad & Sammie) Sundays

Today just isn't sure what it wants to do--it's rainy, then it's sunny, it's a bit breezy and a balmy 73 degrees so perfect for a sunny bowl of chowder. Donna Hay's Cauliflower and Corn Chowder is my soup pick this week. It's a vegetarian soup that can be vegan if you use a dairy-free parmesan or omit it. 


This chowder has no cream, the beans and cauliflower thicken it up when part of the soup is blended.


Cauliflower and Corn Chowder
Slightly Adapted from DonnaHay.com
(Makes 4 Servings)

800 grams (about 1 3/4 - 2 lbs) cauliflower, cut into small florets
1 clove garlic, crushed (I used 2 large cloves--one on the topping and one in the soup)
3/4 cup, finely grated parmesan
sea salt flakes and cracked black pepper
2 Tbsp extra-virgin olive oil
1 leek, thinly sliced
2 corncobs, kernels removed (I used 1 1/2 cups frozen corn)
1 can white beans, rinsed and drained
1 litre vegetable stock
2 cups water (I used 5 cups of non-chicken stock)
1/2 bunch chives, chopped
1/4 cup dill sprigs

Preheat oven to 400 degrees F. Place 2 cups of the cauliflower in a large bowl. Add the garlic, parmesan, salt, pepper, and half the of the oil and toss to combine. Spread the cauliflower mixture on a large oven tray and cook for 20 minutes or until golden.

While the cauliflower is cooking, heat the remaining oil in a medium saucepan over medium heat. Add the leek and cook, stirring, for 4 minutes or until softened. Add the corn, beans, stock, water, salt, pepper, and remaining cauliflower. Cover and cook for 15-20 minutes. Pour half the mixture into a jug or blender jar and using a handheld blender or the regular blender, blend until smooth. Return to the soup pot and cook for another 10 minutes.

Divide the soup between bowls and top with the roasted cauliflower, chives, dill, and black pepper to serve. 


Notes/Results: First off, if you are making the roasted cauliflower with the parmesan and garlic, I suggest doing more that 2 cups worth. Basically because you are going to shove the bits of roasted cauliflower and parmesan crisps bites into your mouth before it gets near the soup bowls. (OK, maybe that's just me.) This is a simple soup, satisfying but not too heavy and good flavor (although I used extra garlic and all stock in mine). I would happily make it again.

Judy of Gluten Free A-Z Blog shared Broccoli Almond Soup and said, "This is a new soup that was not published in my cookbook. The combination of broccoli and almonds in this beautiful soup is quite delicious. The almonds add that Je ne sais quoi. to a simple broccoli soup. ... This broccoli soup was light, creamy, and delicious and not too heavy for my warmer weather. The small amount of almonds gave it a little texture, protein, and healthy fat- but not too much!"


The Crafty Gardener went a bit rogue with her entry, "Soup'er Tuna Casserole," made from a can of soup, but we'll honor it. She says, "I love an old fashioned tuna casserole for dinner. Although this is not a soup recipe I’m still including it with my ‘soup’er recipes as it uses a can of condensed soup."


Debra of Eliot's Eats brought Spicy Lentil Soup, saying, "This soup came out perfect. I loved the combination of flavors and the spicy richness. Check your fridge and pantry for the ingredients. If you don’t have them all, improvise. This soup is very forgiving. For instance, my celery was quite limp and my carrots a bit slimy and who knows how old the lentils were. Don’t have brown lentils? Use green. No worries. It all works."


Welcome Liz from Spades, Spatulas & Spoons who joins us for the first time at Souper Sundays and brings a Spicy White Bean Soup with Chicken. She says, "Melissa Clark of the NY Times calls this recipe “a poem in a bowl”. I must agree that it is certainly delicious and a little different. It gets it’s spiciness from fresh ginger, red-pepper flakes, and cumin. A squeeze of lemon at the end adds a welcome freshness."


Shaheen of Allotment2Kitchen is here with Broccoli and Stilton Soup. She says, "The reason why I wanted to share it, just made me chuckle. The recipe comes from New Covent Garden Soup for Every Day and this Broccoli and Stilton was the recipe they actually suggested to make on the 28th February and what is the date today?!  See why I am chuckling to myself. It was really accidental and not planned. The soup was rich and quite creamy naturally from the addition of the potatoes, so I omitted the cream from the original recipe in the cookbook. I have decided that I actually like broccoli in soup."

Donna Hay's Creamy Potato and Sauerkraut Soup with Hot Smoked Salmon for Souper (Soup, Salad & Sammie) Sundays

I wanted to change up my potato soup game a little and when I saw a recipe for Creamy Potato and Sauerkraut Soup with Hot Smoked Salmon on Donna Hay's website, I knew it was the one I wanted to try. 

I happen to be a fan of sauerkraut and this soup blends it with potatoes, leeks, black pepper and broth then add a creamy cup of crème fraîche at the end. You top it with extra sauerkraut and crème fraîche, and crumble hot smoked salmon and dill at the end. 


Donna Hay's Creamy Potato and Sauerkraut Soup with Hot Smoked Salmon
Recipe from DonnaHay.com
(Makes 4 Servings)

1 Tbsp extra virgin olive oil
1 leek, white part only, thinly sliced
600g (about 1 1/2 lbs) starchypotatoes, peeled & chopped
1 litre (4 cups) vegetable stock 
1 cup (180g) store-bought sauerkraut, plus extra to serve
cracked black pepper
1 cup (240g) crème fraîche
370g (13 oz) hot-smoked salmon, flaked
finely chopped dill, to serve

Heat the oil in a large saucepan over medium heat. Add the leek, cover with a tight-fitting lid and cook for 4 minutes or until softened. Add the potato, stock, sauerkraut and pepper and cook, covered, for 10 minutes or until the potato has softened. Remove from the heat and, using a hand-held stick blender, blend until smooth. 
 
Return the mixture to the pan over medium heat and stir in half the crème fraîche. Divide the soup between serving bowls and top with the remaining crème fraîche, extra sauerkraut, the hot smoked salmon, dill and pepper to serve.

Notes/Results: This soup is so good! I love how there aren't a lot of ingredients and how both the sauerkraut and crème fraîche make it tangy while the salmon adds a smokiness that adds to the depth. It is easy to put together and is really delicious and pretty in the bowl too. It was great with some soft sourdough today and I look forward to enjoying it for lunch this week and I would happily make it again.
