This is satisfying, flexible, and stretches leftovers. It's the only soup that all of my kids will eat.
- leftover mashed potatoes (or instant mashed potatoes, prepared according to package)
- chicken broth to thin (water with chicken bouillon is also okay)
- butter to flavor
Plop the potatoes in a pot, stir in the broth and butter, and heat over medium heat until warmed through and through. Try not to let it boil, your mashed potatoes had milk or cream in them. With salt and pepper to taste, you have a basic yummy soup.
If you have any or all of the following, throw them in for a LOADED Baked Potato Soup!
- cheese
- sour cream
- cream cheese (a little of this goes a long way, and tastes a lot like sour cream in the soup)
- bacon bits
- chives, parsley, green onions
