Cranberry Corn Muffin–Eggless and Butterless

Today's recipe is a muffin which is not too sweet and has an interesting taste from the corn meal and also a tang from the cranberries. Do you like fresh cranberries??? I am not a big fan of it.. But I love them dried.. But I love fresh cherries and prefer it over the macerated ones.. I always have a pack or two of various dry fruits in my pantry. The original recipe here calls for fresh ones but I have used the dried ones. I have also substituted the egg in the original recipe with flax seed meal. Go ahead and use the fresh ones if you like them and also can find them else can use the dried ones like me...

Eggless Chocolate Chip Cookies–Eggless Cookies

Chocolate chip cookies are one of the most favorite and also popular variety of cookie. What is the difference between a biscuit and a cookie? You ask this question and you get different answers from different people. To me, cookie is more softer and chewier but a biscuit (that we get in India) is more harder and crispier. My daughter loves to read Dora stories and one of the stories have Dora's  mom making her Chocolate Chip Cookies and sending it with Dora when she goes to meet a friend. Now my daughter wanted me to make the chocolate chip cookie. So that was when I made my first try on these delicious, mouth melting and soft chewy cookies. I picked up this recipe and did make a few changes. My daughter was very happy with the cookies, so I have made this a few times now and it goes off in minutes before I could take as many pictures as I want!!!

Eggless Julekake - Norwegian Christmas Bread

For this month's Eggless Baking Group, Priya suggested this Julekake which is a Norwegian Christmas Bread. This bread has some interesting ingredients which looked so much Indian to me from the Candied Citron to the cardamom powder. I could not do this bread as soon as it was announced as I wanted to lay my hands on the candied citron. Now citron is nothing but our very own naarthangai which is quite popular for pickles and pachadi in Tamil Nadu. Then I wanted to use Candied orange and to my surprise, I could not find that too.. So I finally used dried Cranberries which also has a tart flavor like the naarthangai. The resulted bread was awesome!!! We loved it texture and the taste.. It was quite soft and so flavorful!!

Eggless Sugar Cookies / Old Fashioned Sugar Cookies

Some goodies are so sinfully delicious!!! Yes this is one of them!! So butter, so much sugar, but so irresistible!! Love this crunchy and delicious sugar cookies which are so easy to make and also looks so beautiful… It was my choice from the cookies that Priya gave us for this month’s HBC. The original recipe had eggs and I replaced it with Flax seed

Applesauce Breakfast Bread

Applesauce Breakfast Bread is a great and sweet bread that is perfect for a snack or for breakfast. I did not add any nuts, but will add next time. It was very very moist and sweetness was just correct. Served with honey was a pleasure to enjoy. I have used flax seed for egg substitute

Eggless Apple Walnut Bread–Very healthy Quick Bread

I get very excited to do dishes that are healthy. Generally sweet bakes have loads of butter, sugar and white flour in it. I try to make them healthy and tasty.. In my house people do not appreciate Oats much, but I try to tweak it and hide it in baked goodies and reveal the secret that the dish has oats after its gets the "Tasty and yummy" certificate... I guess lot of us to try to feed healthy stuff by hiding them in the dish... This bread was a very easy winner in getting the "Tasty and yummy" certificate and wins my "very healthy and easy" certificate and it is a win-win. A healthy quick bread which has no processed ingredients. I got this recipe from here. This stays well (when un cut) for at least 2 days in the fridge. I reheat it for 15 – 20 seconds in the microwave and serve them. It also makes a perfect lunchbox dish. It is a good idea to plastic wrap it if storing it in the fridge.

Vegan Mango Muffins w Hudson Oil

I try a lot of products to keep giving my family healthy and tasty foods.. Some products are well designed and make life so much easier. I got an email from Hudson to try out their Canola oil and was very happy to accept it. They sent me a liter of their oil in a very well packed case. I wanted to make a cake or a muffin and use this oil. When I first opened the main lid, I really liked the next spill proof lid that came along (see image below) and then when we pour the oil out, it is so much easier to not have to worry about spilling around the sides. Very efficient lid as regards to spill proof. I used this oil and made the Vegan Mango muffins and it was a very big hit among my family members. Delicious muffins and the house is filled with mango flavor and aroma. These muffins have very less fat and a lot of healthy stuff like whole wheat pastry flour, flax seed. However this does have quite a bit of sugar. You can reduce the sugar to 1/2 cup if desired. This sweetness was perfect for us. I got this recipe from here and I absolutely love it.
