Cheese Bread Bites

CHEESE BREAD BITES

I've got another recipe for you using the bread machine dough. It's a perfect addition to your spaghetti night.  Or if you're like me, a quick snack in the middle of a crazy day.  They reheat wonderfully!


Before you bake them, you top them with a wonderful buttery-garlicy mixture that melts down into the rolls, and makes them super tasty.

  •  1 recipe bread machine dough
  • about 2 cups mixture of shredded cheese (I used what I had in the fridge--cheddar, mozzarella, parmesan)
  • 3 Tbsp melted butter
  • 1 Tbsp italian seasoning
  • 1 tsp garlic powder
  • parmesan cheese for topping
Grease a 9x13inch pan, and preheat your oven to 350degs.  Take your bread dough, and pinch off pieces about the size of a golf ball.  Flatten the dough with your fingers, and put about 1-2 Tbsp worth of cheese in the center of the dough.  Pull the edges up and seal the cheese in.  Place in the pan, seam sides down.  Continue until all the dough is used up.  Let rise in a warm place for about 30 minutes, then combine the melted butter, italian seasoning, and garlic together.  Brush over the top of the rolls, and then sprinkle with the parmesan cheese.  Bake for about 15-20 minutes, or until the look cooked though (The butter will be bubbly in the middle, and the rolls brown on top.  Some cheese might even be oozing out).

Pizza Bites

Remember that bread machine dough recipe I posted about the other day?  Well, this is one of the awesome uses for that dough. 


I love when the sun comes out just long enough for me to take some relatively decent pictures without the flash making everything look funny.  We haven't had nearly enough sun lately. 

One of the things I have come to love about this recipe is how easy it is to adapt to what you want.  And that I can freeze them, and cook them from a frozen state.  It's now one of our go-to meals.  When I have the time to spare to roll, cut, fill, and pinch (that can be time consuming) I love to whip up a batch of these and throw in the freezer.  I've had great success with freezing IN the mini-muffin tin, then transferring to a ziplock, as well as just freezing on a lined baking sheet.  I actually prefer the muffin-tin method, as the bites then fit perfectly back in the tin when I'm ready to bake them.

  • 1 recipe bread machine dough (or your favorite pizza dough recipe, or from a tube)
  • cubed mozzarella cheese
  • diced pepperoni
  • pizza sauce for dipping
Roll out the dough to about 1/4" thickness.  Taking a pizza cutter, or a knife or something, slice the dough into about 2x2 squares.  Place the pepperoni and cheese on each square.  Approximately 1-2tsp of each.  Pull the corners of the dough over the filling, and pinch to seal all the edges.  Repeat with all the squares.  Place in a greased mini-muffin tin and bake at 400degs for about 10 minutes.  Watch them.  They're so small that they will cook quickly! Serve with pizza sauce for dipping.

FREEZING: Make all the rolls.  You can either place them in the muffin tin, and freeze them, OR place them all on a lined baking sheet and freeze.  Once frozen, place in a ziplock bag.  To cook, place the FROZEN bites in the mini-muffin tin and bake for about 15-20 minutes, until the top is brown.  Serve with pizza sauce for dipping.

VARIATIONS: Try your favorite pizza combination!  Hawaiian, veggie-lovers, meat-lovers, chicken bacon ranch.  Endless variations!

Bread Machine Dough

BREAD MACHINE DOUGH


There's something about just dumping everything into a machine, and ending up with the perfect dough.   My sister in law brought these rolls to Thanksgiving dinner, and I begged her for the recipe.  Especially after I found out she made them in her bread machine!  I have a baking problem.  I struggle with it. Perhaps it's the preciseness it can take.  I don't have that in me!  I never measure when I cook, I eyeball everything.  It's rather difficult to do that with baking, as it can throw off everything.  


MINDY'S BREAD MACHINE DOUGH

  • 1 cup milk
  • 1 egg 
  • 2 tbsp butter 
  • 3 cups flour 
  • 1 tsp salt 
  • 3 tsp yeast   
  • ¼ cup sugar
Place all the ingredients in your bread maker according to manufacturer directions (Mine is dry first, followed by wet).   Mix on dough setting.  Take out and form into rolls.  Let rise in a warm place for 30 minutes.  Bake at 350degs for about 11-12 minutes.  While rolls are still hot from the oven, take a stick of butter and rub the tops with it.
