Mrs. Claus Cookies Box and Shirt

Good morning everyone!        I  had a request from my daughter to make a recipe card from Mrs. Claus. You see, she asked Ruby what she wanted from Santa Claus. Ruby replied "Strawberry Cookies"! My daughter had a recipe for strawberry cookies and sent it to me by by e-mail. I found a cute recipe card from Mrs. Claus on Google. I added Mrs. Claus and Santa and typed in the Recipe and Ruby's name and printed it out (she is going to frame it to sit it up on her cookbook bookcase every Christmas). She is going to get a box and put most of the ingredients, (sans refrigerated items) in the box with the recipe from Santa. I decided to take it a step further and decorate a cute little shirt with an iron on and make a box to match it.          Of course Ruby is getting more than strawberry cookies for Christmas. I know for a fact she is getting a tricycle and baby doll. 
I talked to her last night and she had just gone to a concert that her Mom conducted (she is Director of Music at a school). Mom asked again what she wanted from Santa and she said "a marching band", and I said what about a baby doll? Ruby replied a "baby doll and a marching band".  I don't think we can fit a marching band in a box!
Here is the Recipe card from "Mrs. Claus". I put a piece of paper over Ruby's full name.
 Here is the shirt and matching box.
 I love the added jingle bells with twine.
 here is the back of the box. Mom or Dad can fill in Ruby's list.

Christmas Apron Box and Recipe Book

Hello! Here is an adorable recipe box and recipe book I made for my Granddaughter. She loves to cook and always calls me for recipes. I thought I would do a Christmas cookie book for her. I love how it turned out! I hope you like it!

 I made the oven mitt look quilted and "stitched" around it and the pocket.
 I love my little book!




 Here are some photos of the inside pages. There are two cards for every recipe except two. The back inside book flap has a place for me to write a personal message.

Pumpkin Spice Doughnuts Recipe

I had a request for the doughnuts I made this morning, so here it is.
Recipe
Nonstick cooking spray
1/2 cup firmly packed light or brown sugar
1 cup canned pumpkin
1/2 cup nonfat milk, or low fat buttermilk
1 large egg white
1 Tablespoon butter melted
1 teaspoon pure vanilla extract
1 cup all-purpose flour or whole-wheat pastry flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon or pumpkin spice
1/4 cup confectioners' sugar

1. Preheat the oven to 350 degrees. Coat a doughnut mold or 12 cup mini muffin tin with cooking spray.
2. In a large bowl, beat together the sugar, pumpkin, milk, egg white, and vanilla. Add the flour, baking soda, baking powder, and spice, and mix until completely incorporated.
3. Pour the batter into a gallon sized plastic bag and cut the bottom tip off of one side of the bag. Squeeze the batter through, into the doughnut mold. Bake until the tops are lightly browned and a toothpick comes out clean when inserted, about 25 to 30 minutes.  Turn out onto cooling rack. When cool, dust with confectioners' sugar.
4. Store in an airtight container at room temperature for up to 2 days, or freeze for up to 1 month.
5. You can substitute 1/2 cup of sweet potato puree for half of the pumpkin.

SWEET REFRIGERATOR PICKLES

Well, here is what my grandson Zachary and I did with some of the cucumbers! They are really yummy! Here's the recipe.
7 cups of thin sliced cucumbers
1 cup of thin sliced onion
11/2 cups vinegar
2 Tbsp. salt
3 cups sugar
1 Tbsp. celery seed
Mix cucumbers, onion and salt together and let stand for 11/2 hours. Drain water off.
Bring sugar, vinegar and celery seed to a boil and boil 1 minute. Pack cucumber onion mixture in 4-1 pint jars, pour hot liquid over until completely covered. Put on lids and screw bands. No need to process.
Cool to room temperature and refrigerate.  Will keep in refrigerator for months.
