Qovurilgan yosh kartoshka (Fried baby potatoes)

Hi there everyone! I am so sorry for my long break, as always, I have so much to do! This time it's even more work, as somehow, most of my food photos are lost (don't know how????!!!!) and I have to cook all those dishes again! I need that photos for my book (I have to work on it a little bit more...). I suspect that maybe my daughter accidentally had deleted them... For the other side, maybe it's for my sake, as now I have better camera and my photos are much more beautiful!!!
Let me share with you one of my mother in law's favorite snack (photo is taken with my old camera, I have some more photos and recipes, I have to post them soon:))
 As soon as young baby potatoes are available at the market, my mother in law gets them, for cooking her favorite snack:) Though it is a little bit time taking, but still the taste worth the work:) Besides, nothing like eating those fresh, crunchy and delicious baby potatoes!
Ingredients:
500 grams of baby potatoes
half a liter of clarified butter
Salt to taste
Pepper to taste
Cook/boil  baby potatoes with their skin. When they are ready, drain the hot water and wash with cold water. Start peeling out their skin, and yeah it will take some time:)
Heat butter well and then deep fry potatoes in it. Fry half of all potatoes at a time, that will make them  crunchier. At the end, sprinkle with some salt and pepper. Goes well with fresh tomatoes and cucumbers:)

Dimlama qovoq


I wrote that I am in love with a pumpkin! There is a plenty of recipes with pumpkin in Uzbek cuisine. Today I am posting one of my favorite - "Dimlama qovoq" - that is stewed pumpkin with a sour cream. You can serve it as a side dish or as a main, as you wish:)
Ingredients:
50 gr of oil
I use half of a medium sized pumpkin, just peel and cut in cubes
150 ml of sour cream
1 tbsp of sugar
Salt to taste
Fresh chopped coriander leaves
Heat the oil well and put all of the pumpkin. Fry on a high until pumpkin is light browned. Always stir carefully while frying. Now add in sugar ans salt, fry for another 5 min. Lower the heat, add in sour cream and 50 ml of water, close the lid and cook for 15- 20 min. Take from the heat and serve. You will see there a little soup like liquid, I usually serve it in small dishes, actually this soup is the best part:) You will love it! Oh, don't forget to sprinkle some fresh chopped coriander leaves!

Kartoshka pyuresi (Mashed potato)


I understand that it is simple and ordinary dish but anyway I decided to post the recipe, just to show how I make it:). Mashed potato puree is very popular in Uzbekistan and is preferred side dish for many people.
Ingredients:
4-5 potatoes, peeled and cut in medium pieces
Water for boiling
50 grams of butter
Salt to taste
1 egg
Canned green peas
Put potatoes into boiling water and cook until potatoes are very soft. Add in salt and cook for 5 min more. Drain the potatoes, saving a cup of water in this process.

Add in butter and enough water that was saved (add water gradually, to make the paste thick and smooth) into cooked potatoes and finely mash them. Well your mashed potato is ready at this stage, but if you want to serve it beautifully as I did, do the next thing: add 1 egg to mashed potatoes and mix well until no lumps. Grease the baking sheet. Preheat the oven. Put mashed potatoes in pastry bag with a special tip (that you use for decorating cakes) and squeez out some mashed mixture shaping a rose. Bake these "roses" until they are slightly golden in color. Put some green peas in to the middle and decorate with fresh green leaves. Enjoy your beautiful and yummy roses!

Tuhumli Gulkaram (Cauliflower fried with eggs)


"Tuhumli gulkaram" is tasty and useful meal. It is easy to make and nourishing dish. Cauliflower is low in fat which is just perfect for the people, who wish loose some weight, it is rich in fiber, foliate and vitamin C. Cauliflower is very useful for pregnant women and also has an anti-cancer compound.
To keep all vitamins, I prefer steam the cauliflower, rather then boiling. Can be served as a side dish or an independent meal.
Ingredients:
1 cauliflower
3 eggs
a little oil for frying
Salt to taste
Wash cauliflower and separate to small bunches. Steam for 20 min, or until nicely cooked. Beat up eggs and salt. Prepare your pan, pour 2-3 tbsp of oil for frying. Dip every bunch of cauliflower in egg and fry until golden.
Goes good with meat dishes.
