Cream Cheese Bonbons

Pretty coconut speckled candies rolled in grated chocolate but you could coat in finely chopped nuts or chocolate sprinkles. Can substitue almond extract for vanilla and coat in chopped toasted almonds.
Ingredients
- 1 pkg (8oz) reduced-fat cream cheese shopping list
- sugar substitute equal to 1/3 c sugar shopping list
- 1 Tbs sugar shopping list
- 1/2 tsp vanilla shopping list
- 1 c flaked coconut shopping list
- 1 square (1oz) unsweetened chocolate ,grated shopping list
How to make it
- In small bowl,beat cream cheese,sugar substitute,sugar and vanilla until smooth. Stir in coconut. Refrigerate 30 mins or till easy to handle.
- Shape into 1" balls;roll in grated chocolate. Refrigerate at least 1 hour. Store in airtight container in refrigerator.
- I did the recipe using Splenda.
