How to make it

  • Wash, peel, and chop into bite sized pieces - all the ingredients.
  • Next, toss all ingredients, combined, in a large baking dish.
  • Liberally sprinkle olive oil and sea salt on veggies. Toss.
  • Bake at 350 for one hour and 5 minutes.
  • Halfway through baking, take out of the oven and toss the ingredients again. Sprinkle with 1/2 cup vegetable broth. Toss again.
  • After baking, toss, add more sea salt as needed.
  • Add Balsamic vinegar and toss again.
  • Serve while warm over 1 - 2 tbs. goat cheese in individual bowls.
