Roasted Warm Beet Salad with Goat Cheese

- 2-3 medium to large red beets shopping list
- 1 red onion shopping list
- 1 Vidalia onion shopping list
- 3-4 large carrots shopping list
- 4 Roma tomatoes shopping list
- Sea salt, course grained - to taste shopping list
- Extra Virgin olive Oil shopping list
- Balsamic Vinegar shopping list
- Vegetable broth shopping list
- Your favorite goat cheese. shopping list
How to make it
- Wash, peel, and chop into bite sized pieces - all the ingredients.
- Next, toss all ingredients, combined, in a large baking dish.
- Liberally sprinkle olive oil and sea salt on veggies. Toss.
- Bake at 350 for one hour and 5 minutes.
- Halfway through baking, take out of the oven and toss the ingredients again. Sprinkle with 1/2 cup vegetable broth. Toss again.
- After baking, toss, add more sea salt as needed.
- Add Balsamic vinegar and toss again.
- Serve while warm over 1 - 2 tbs. goat cheese in individual bowls.
