    Delicious! My favorite and only way I like eggs. Great for breakfast, great for lunch, or great for dinner. I don't peel the potatoes, nothing wrong with keeping the skins on, I think it adds more character to the dish. Sometimes I add chopped vegetables like broccoli, asparagus, or green pepper, and sometimes a cheese.

    I really loved these. I had planned on four flour tortillas due to the size of my pan and I am glad I did. I think these ingredient easily can make four enchiladas. I didn't use the green chilies but I put 1 teaspoon of chipotle chili powder into the beans and heated them up in the microwave for a minute so I could easily stir it in. I painted my tortillas in a dinner plate rather than in the pan. I used a four cheese Mexican blend and a couple of green onions I found in my refrigerator. Added some pictures and this to IMI on 8/29/15.

    This was pretty good and easy enough. I used my electric skillet and could see through the glass cover after about three minutes that the liquid was not evaporating. Seemed like the condensation was making more, not less. So, I took the cover off and cooked it all for about six minutes more until the liquid was gone. The potatoes were just right. I think this would be great with some thyme or something like that, but a very good dinner for me. Added a picture of my results. A tad more in IMI

    Yes, I thought that putting butter in with the beef sounded strange too, especially in the crockpot, but it really adds a richness to the sauce. I hope you have the opportunity to try it! Thanks for the comment! ~ Natalie (fizzle3nat)
