Working Mom's Cooking Tip o' the Day

Rotisserie chickens from the grocery store are awesome. They make a meal on their own, but the leftovers can also be used to throw together quick meals later in the week.

Yesterday I bought two rotisserie chickens, for $5 each. My kids all want legs, and since I haven't found a three-legged chicken, two chickens solved that problem. For dinner last night I cut off the legs, thighs and wings of both chickens, and a little of the breast. I chopped up the rest of the breast (about 3 cups) which will be enough for two more meals. I'll probably do a chicken pot pie one night (which is a little time consuming, but can be made ahead and refrigerated or frozen) and fettuccine alfredo another night--which I can thrown together in about 20 minutes.

I love rotisserie chickens! Especially the ones at Sam's Club. I throw it on mixed greens for my lunch many days, give the legs to Pumpkinhead and make chicken sandwiches for Chapin. Yum, yum, yum. In fact, I think I'm going to make chicken sandwiches to eat on the ride to DC.

We get these, too. Usually from Trader Joe's. We tend to get hummus and tabouli with ours, and eat them in pitas with baby carrots to munch on the side. Then we take the extra, and beloved mixes it up with grapes and stuff and makes chicken salad.

Very yummy!

Oh man, I miss Trader Joes. I definitely need to add it to my list to visit while in DC.

Rotisserie chickens are the best! I know they had to be invented by a working mom. We keep around a lot boxed rice (spanish, thai etc.)from trader joe's and wha la, almost passes for home cooking.
