Then on Friday morning Nick woke up, showered, and came back to bed. He said he didn't feel well and wasn't going to work. I knew he was really sick, because in the three years I've known him, he's only called in sick for work twice. His fever was 102. Needless to say, my weekend was spent taking temperatures, pouring Gatorade and giving meds. The highlight occurred on Saturday evening when I went to Wal-Mart to buy more Gatorade and Nick a new toothbrush. I did get a lot of laundry, ironing, organizing, (and let's be honest, sitting in my pajamas reading magazines and blog stalking) done- so that was a plus.
Luckily, Nick seems to be feeling a lot better today. I hated seeing him feel so bad! He's playing his X Box right now, as a matter of fact. This morning when we got up, I could tell that he was a lot better. I made a big breakfast and then disinfected our house. I literally bleached every phone, doorknob and remote control we own. I scrubbed the sinks, toilets, trash cans, washed blankets... One of the things I bleached was our computer keyboard, and I think I might have messed it up. The buttons now have a white film on them- like maybe they're peeling. OOPS!
I just can't get sick. I know people always say that, but I have taken off A LOT of days this year. Between my grandpa being sick and his funeral, Erin's wedding, getting sick twice and missing four days for that... I have hardly any days left. I'm really hoping my cleaning efforts will pay off (and my keyboard survives.)
Anyway, I wanted to post a really good soup recipe that I got from my mom. I make this pretty often. It makes enough for 4-6 people, but I usually make it and then freeze half.
Tortellini Soup
Tortellini Soup
You need:
-1/2 of an onion, chopped-2 tbsp. butter
-1/2 tsp of thyme (or basil if you prefer that)
-2 cloves of minced garlic
-1 can of diced tomatoes
-2 cans of low sodium beef broth
-1 can of garbanzo beans, rinsed and drained
-1 package of refrigerated tortellini pasta (I like the Buotini cheese kind)
-pepper and parmesan cheese, to top.
You do:
1. Saute the onion in butter until it's a pretty golden color and soft (5 minutes)
2. Add the thyme (or basil), garlic and tomatoes. Simmer for 10 minutes.3. Stir in beef broth and garbanzo beans. Continue cooking for 15-20 more minutes. (Until the beans are soft.)
4. Boil pasta, drain and add to the soup as it finishes.5. Top with pepper and parmesan.
I also made a really good green salad. I'm not very good at making salads, but this one turned out well. I got the idea from the salad we ate in Granbury and just used the things we already had. I just took a bag of mixed greens, unsweetened mandarin oranges and toasted almonds. (The flavor is a lot better if you toast them.)Then add shredded parmesan cheese (crumbled feta or blue cheese would be good too!) and balsamic dressing.
Slap some butter, parmesean cheese and garlic powder on bread, stick it in the oven and viola! You have a quick and easy meal that even your mom would be proud of for yourself and the guy on the couch. Have a good Sunday!!

Hey I am going to be in your neck of the woods in March 28th. I have to drop off Jeff's mom and sister at the airport. I would love to swing by and see your new house and spend some time with you. Think about it and hopefully that day will work out.
