PANEER MASALA DOSA

Paneer masala dosa sounds pretty interesting right? hahaha well it is. U know guys this paneer masala dosa recipe I call it as 2 in 1 because I did the masala the previous night for dinner with chappati and the next day I ended up stuffing them in dosa naming paneer masala dosa :) So its indeed a good idea to cover up all the leftover items into delicious unique yummies. I served this dosa with ''SWEET POTATO UMMAN'' which was a very good combination.

Paneer masala dosa is somthing unique one I tried from normal masala dosa which are very popular breakfast in South India. They have it with chuntney and sambar. Yumm what a comfort breakfast right? So below is the ingredients that I have used for my paneer masala dosa :)


INGREDIENTS.

Dosa Batter.

500 Grams Paneer.

1 Big Chopped Onions.

1 tbs Chopped Ginger and Garlic.

1 tsp Jeera.

1 tsp Red chilli powder.

2 tsp Coriander powder.

2 tsp Garam masala.

1/2 tsp Turmeric powder.

1 tsp Amchur Powder.

1 tsp Oil.

Salt to taste.

Coriander leaves for garnish.

METHOD FOR PANEER MASALA.

Grate the paneer and keep aside. Heat oil in a kadai, add jeera, ginger garlic and onions. Fry them till the onion are translucent.

Now add red chilli pdr, coriander pdr, turmeric pdr, garam masala and amchur powder. Saute it for a while. Add grated paneer and lastly garnish with coriander leaves and keep aside.


METHOD FOR PANEER MASALA DOSA.

Place a non stick tava.

Pour the dosa batter onto the center of the tava and spread in a circular motion. Put oil on the edges to make the dosa crisp.

Soon as u c the dosa turning slight brown, place few spoon of paneer masala on one side and flip the other side dosa over the masala.


Make sure it is fully covered.

Serve with ur fav dipping.

TAIKILE CHUTNEY FROM APS KITCHEN PLUS AN AWARD.


I was not able to sit in a place when I had a glance at taikile chutney in ''Aparna's blog from aps kitchen''. It remind me the day when I went to her place with my daughter. I must surly appreciate her mom making tikile vada (tikile ambado) , mangalore buns, halwa and few more goodies. I enjoyed to my fullest having those and remaining I packed to my home :) I was not aware of what tikile is. She gave me its chutney for taste which also I loved it and my smera ohhhh boy, she just adore having it as it is and I guess she had almost finished it off :)

I have come acrossed many chutney but the one that really popped my eyes was this chutney. This was entirly new to me. Thus I decided to make them for sure because this is somewhat unique chutney I haven't prepared nor seen. When my loving, talented sweet pal aparna posted this recipe along with the picture of tikilo leaves (cassia tora), I immediatly showed the pic to my fatherinlaw and the very next day he bought it for me. Thats so nice of him na? I prepared this chutney that day itself for dinner with onion dosa. It was just outstanding. The changes I made here is I added grated ginger and lime juice for tangy flavour as the additional of tamarind was less. But this did not compromise the flavour. We enjoyed it so much.



INGREDIENTS.

1 cup washed and drained taikilo leaves.

1/2 cup Grated Coconut.

2 tsp Jeera.

1 tbsp Grated Ginger.

Tamarind (as per needed)

3 Dried Red chillies.

1 tbsp Oil.

Salt to taste.

Lime juice (optional )



METHOD.

Heat oil in a pan. Add jeera, grated ginger, red chillies and coconut and fry till the coconut is semi roasted. Now add the taikilo leaves and fry until leaves have changed their color. Lastly drop in the tamarind and saute for another 2 min.

Transfer it into a bowl add salt and mix well. Add lime juice if u prefer more tanginess.

Serve with idlies or dosa.

BANANA FRITTERS / PAZHAM PORI

Banana fritters is the traditional dish in kerala. Its served as a snack along with hot tea. These tastes yummy when the plaintains are ripe. You could know them looking at the skin of banana becomes a bright blacky. These are very quick to make at the same time satisfy our tasty buds. Do try these delighful snack for sure. No doubt everyone, also the kids will love it when its served with vanilla flavoured icecream.


INGREDIENTS.


2 Ripe Nenthran Pazham.

1 Cup Maida.

2 tbsp Rice flour.

1 tbsp Sugar.

Pinch of Soda.

Pinch of Turmeric Powder.

Pinch of Salt.

Pinch of Yellow Colour. (optional)

Water as needed.

Oil for deep fry.

METHOD.

Slice the ripe banana as thin as possible.
Mix all the ingredients one by one. Add water as per needed to make a batter. The consistency must not be very thin nor thick.
Heat oil in a kadai. Now dip each slice of banana into the batter and deep fry carefully. Fry on both the sides till its crispy and slight brown.
Serve hot hot.

PHAGIL PODI

Phagil is a type of veggie which is prepared as a fried item in mangalorean cuisine. I had no idea before what they prepare of it nor, I dont know its name either. Its the first time I had at my sister's in law home and surly I do loved them. When ''Aparna of aps kitchen'' posted that recipe, I was soo crazed looking at her picture that I was just enough inspired preparing that at home. I truly enjoyed making them and end result came out superb. The changes I made is instead of soaked rice and whole red chillies, I altered rice flour and chilli powder. Therez no exact measurement for this. You can use more or less based upon the quantity and as per taste. Have a look.

INGREDIENTS.

5 to 6 Phagil.

Chilli Powder.

Turmeric Powder.

Hing.

Salt to taste.

Rice flour for coating at end.

Oil for deep fry.

METHOD.

Make a thin slice of Phagil shown as below.


Mix the rest of the ingredients in a bowl except rice flour and marinate them on both the sides of slice. Lastly sprinkle them with adequate rice flour and allow them to rest for half an hour.


Heat oil in pan. Deep fry them till its crispy brown.


Serve hot.

We both had conversation through orkut and decided to meet finally. Me and my daughter had a warm welcome by her mom who was soo frank type and so sweet. The moment smera saw ujwal, she become soo close with her. Had a wonderful talking with them and specially regarding treats there were chakli, chips, pan patholi with choon , brown riced ladoos, salty puffs etc. hmmm so yummy it was. My little one too enjoyed herself. She just love meeting new people around and by now 'Ujwal' and 'Aparna' would have known much better about her :).

BANANA FLOWER SUKKE ( THORAN )

'Bowndi' is what we call in Konkani. Its one of my favourite vegge but, I prepare rarly at home and the main reason is I hate chopping them which I feel its a hectic job. But here, thanks to my MIL who did for me. I have heard one tips for removing its bitterness is to soak them in the buttermilk. But according to me, this process may result in loosing all nutrients. So I dont prefer those. I just love its flavour a lot. And why not, this banana flower tastes great in any form. My mom makes cutlets out of them which is just incredible in taste. Will try out and will come up with the recipe soon. :)


INGREDIENTS

1 Banana flower.

1 tbsp Urad dal.

1/4 Cup Grated Coconut.

1/2 tsp Turmeric powder.

1 tsp Chilli powder.

1 Green chilli.

1 tsp Mustard seeds.

1 tsp Oil.

Salt to taste.

METHOD.

Remove the outter petals until you get a edible portion. Chop them finely after picking out the sticks and the transparent petals from them. Wash them into water and keep it aside.

Heat the oil in a pan and splutter mustard seends. Add ural dal and stir till it becomes brown. Later add green chilli , the chopped banan flower and salt with some adequate water to cook.


Bring them to boil and simmer for few min till its cooked. Meantime in a bowl, mix the grated coconut with turmeric and chilli powder and keep it aside.

When the banana flower is well cooked, add the coconut mixture and saute them until its completly dry.

Remove and serve hot.

RAGI IDLI WITH CORIANDER CHUTNEY

This is simple and elegant breakfast that I rarely do it on sunday's. I was very much interested to make ragi idlies and I tried this from ''RAMYA'S BLOG''. Her pictures were just enough to push me into making this and also somthing different from the normal ones. I followed her quantity of ingredients exactly as she described without changing anything. It was too good. Thanks ramya for the fabulous healthy idli.


Chutneys are always quick to prepare and does not need much ingredients. 'Coriander chutney' is one of my favourites of all and goes well with dosa and idlies. This chutney can be prepared in matter of minutes. The most I love in this chutney is the dark colour and appealing. Also the freshness of mint leaves with a mild flavour of garlic makes this chutney fabulous.


INGREDIENTS.

1 Bunch of Coriander leaves.

1/2 Cup Mint leaves.

1 Small Tomato.

3 pods of Garlic.

2 tsp Chopped Ginger.

2 Green chillies.

1/4 Cup Grated Coconut.

1 tsp Oil.

Salt to taste.

METHOD

Heat some oil in a pan. When it gets slight warm add garlic and ginger. Fry them its raw flavour disappers. Then add green chillies and tomato. Saute them for a while. Then add coconut and finally the mint and coriander leaves with a pinch of salt. Allow the mixture to cool. Put everything in the blender and blend them smoothly. Add water if required. Transfer them into the bowl. Serve with ragi idlies.

100 TH POST AND 1 ST ANNIVERSARY OF MY BLOG PLUS A LONG BREAK.

Yuppyyyy...Here comes my century post, also celebrating my 1 st anniversary of my blog on a same day. Frankly speaking I really feel proud :). May 5th, the day I started my own food blog and entered blogging world. It had been soo exciting and fun year participating many events, visiting many talented blogs, etc etc. Through this, I earned lots and lots of love and support from many blogger friends. Blogging has become an important activity along with the other chores. With a great encourgement and positive feedback of one of my close blogger friend ''BHARATHY'' and a huge support from my loving hubby ''RAJESH'', I could possibilly start my blog. Later with sweet comments and appreciation from all you guys, my close friends which is a sole reason, motivated me to continue my blogging journey till today. Thanks all once again for your love and support and hope this will remain always. I truly appreciate. Special thanks and love to my ''AMMA'' too. Everytime when I post new recipe, she surly does suggest her comments while chatting :)

On this special day, I would like to treat you all with simple, delicious and delightful ''AAM RAS''. Its soo simple that at anytime, you can prepare within no minute. I am not giving specific measurement. You can add more or less depending on what you like. Try adding fruits into aam ras to make ''Mango Flavoured Fruit Salad''. Its very yummy.



INGREDIENTS
Mango pulp.

Sugar.


Milk.

Cardamom powder.

Saffron.

METHOD

Beat everthing into the blender for about 20 sec.

Serve chill. Make it more attractive garnishing with fresh strawberry.

TAKING A LONG BREAK.
Friends, We are in process of moving to India permanently within next 2 weeks. So my upcoming days will be really hectic and busy with shopping, packing, selling my furnitures and mainly cleaning my apartments before we leave. On this special day, I am ending up my last post in US and will be back once I settle down in Mangalore. Till then, will miss you all and dont forget to miss me tooo :)

DIFFERENT NOTE:
Our friends organised one send off party for us last weekend. Thats soo sweet of them na? We truly enjoyed the day chatting, playing games, watching adorable kid's play together and finally the food, oh man! that was just heavenly. I would grade it as ''A PLUS''.
I did not get a chance to click on all the items together because, few of them were on process :). We all were soo tempted to taste the food that we already started digging into it. Luckily, I tried my best to have atleast one snap. Because I knew, if I waited further, then there wont be any use clicking a snap later. So herez the click of half menu items on the table. So now all can guess what a wonderful yummy feast I have experienced. Lucky me right?

PUTTU WITH KADALA CURRY

This is an exoctic dish from kerala cuisine served as a breakfast item. Puttu is served not only with kadala curry but its also served with banana and pappadam which my fatherinlaw loves a lot. You can use ragi powder too instead of rice powder. For more attractive and healthier version try adding grated carrots or beetroots or radish along with the puttu mix. Usually for puttu, brown coloured chickpeas is used. But here I tried with white chickpeas which also tasted good.


INGREDIENTS FOR PUTTU.

Puttu Powder.

Salt to taste.

Water as per needed.

Coconut grated.


METHOD.

Mix in puttu powder with salt using water little by little. The puttu powder must be moist. So make sure dont add more water. Its done when we make a ball out of that powder and it gets crumble. This must be the right consistency. In a puttu maker, fill the down layer with few grated coconut then a part of puttu powder then add another handful of coconut. It be should be repeated till you reach the top of the maker. Steam them till its done nearly for about 6 to 7 min.


INGREDIENTS FOR KADALA CURRY.

FOR GRINDING.

1/2 Cup Grated Coconut or coconut pieces.

2 tbsp Coriander seeds.

2 Dry Red Chillies.

4 Peppercorns.

2 cloves.

2 inch Cinnamon stick.

2 tbsp Onion chopped.

1 tsp Tamarind extract.

METHOD.

Dry roast all the ingredients till you gets all rosted and forms into borwn colour. I just love its aroma at the end.

Cool it and grind using few drops of water. Keep it aside. If the masala is grinded without using water, then that can be stored nearly for 1 month in an air tight container.

FOR GRAVY.

11/2 cup Boiled Chickpeas along with its stock.

1 Chopped Onions.

1 Chopped Tomatoes.

1 tsp Jeera.

Salt to taste.

1 tsp Oil.

Coriander leaves for garnish.


METHOD.

Heat oil in a pan, add jeera and ry onions till it turns transulent. Add tomato and required grounded paste. Stir for a while. Lastly add the boiled chickpeas along with its stock. Season with salt and bring to boil. Garnish with coriander leaves.

TOMATO SOUP

Soups are the best appetizers and most common among them is tomato soup. I was very tempted to make this tomato soup when I browsed ''SIREESHA'S'' blog. Shez soo adorable and an excellent cook indeed. Now shez on break to India and hope she join our blogging world soon. Miss you sireesha and also your yummy recipe. Her soup ingredients was very simple and inviting that I decided to make the very next day also that was her microwave preparing. The change I made is I added fryed bread pieces on the top to make it a crispy bite while slurping hot soup.


INGREDIENTS.

4 Ripe Steamed Tomatoes.

3 Cloves of Garlic.

1 Chopped Onions.

1 tbsp Butter.

2 tbsp Cornflour.

3/4 cup Milk.

Salt and pepper to taste.

Fryed Bread pieces for garnish.


METHOD.

In a microwave container add tomato, garlic, onions and salt. Micro high for about 7 to 8 min.

Remove tomato's skin and puree the mixture in blender.

Melt butter in microwave for 10 sec. Combine flour and stir briskly making sure not to from any lumps and micro for another 1 min. Thus the flour leaves its raw taste.

Slowly add milk and give it a quick brisk. Add tomato mixture and micro again for about 5 min.

Add required amount of salt and pepper to salt and finally garnish with croutons or any of your favourites.

EGG MUFFINS

Are you a egg lover? If Yes do try this tasty and healthy snack. Its soo fluffy and moist that anyone can have it at any time. It would be somthing new for the kids rather that offering them an omelet or scrambled one or Indian type bhurjies so n so.This would be a lovly platter for them if its garnished with their favourite sause specially tomato ketchup because my kiddo love just the same way :) . This is also served as an breakfast item. It makes whole some filling when you have it along with fresh juice. Any of ur favourites veggies or non- veg like sliced ham, bacon shredded chicken can also be added in the egg mixture. The measurement I have specified is apporoximate amounts as you can put more or less depending on what you like.


INGREDIENTS

5 Eggs.

1 Chopped Spring Onions.

2 tbsp Chopped Tomatoes.

1/4 Cup Milk.

2 tbsp Chopped Capsicum.

2 tbsp Chopped Mushrooms.

1/4 Cup Grated Cheese.

Salt and pepper to taste.

METHOD

Preheat oven for 350 degree.

In a bowl, beat eggs and whisk it. Add each ingredient one by one.

Grease the muffins tray and fill the mixture about 3/4 th of the way.


Bake them for atleast for half an hour or until a knief inserted comes out clean. When its done loosen them around with a knife.

Garnish with ur favourites items.
