PUDINA RICE

There are many varieties of preparing Pudina rice. This is the simplest one I learnt from my friend which tastes equally soo good. Therez no need of coconut nor whole spices. Do try this simple and  quick rice which will be ready in jiffy :) To attract kids, I have added corn kernels which gives you a nice crunchy bite :)
INGREDIENTS

1/2 Cup Basmati Rice

1 Onion

1.4 Cup Frozen Corn kernels

Cashews if needed

2 tsp Ghee.

Salt to taste.

INGREDIENTS FOR GRINDING

1 Cup Pudina leaves

2 Green chillies

Half of lime juice

METHOD
Wash and soak rice for about 15 min. Meanwhile grind the ingredients until smooth paste using adequate amount of water. Now heat a pressure cooker adding ghee. Fry the onions, corn and cashews followed by the grind ed paste. Once the raw smell of the leaves disappears, add the soaked rice and mix well. Add in 1 cup of water or little less than that and cook until the rice is fully done. Serve hot :)

CORN EGG PUFFS

Puffs is a perfect party recipe. It acts as a best snack either in the form of veggie or chicken or egg etc etc. It can be frozen and can be baked later. Good thing about this is you could fill any of your filling you like. I have made using egg and corns which my family loves alot. Puff sheets can be easily available in supermarkets. If not, can be of homemade puff sheets too. Will be back soon with the  recipe :)

INGREDIENTS

Ready made Puff sheets

2 Boiled eggs

1 Egg for brushing

2 Chopped Onions

1/2 Cup Frozen corns

1 tbsp Ginger Garlic paste

1 tsp Jeera

1 tsp Red chilly pd

1/2 tsp Turmeric pd

2 tsp Kitchen King masala

Pinch of Amchur pd

1 tsp Lime juice

Coriander leaves for garnish

2 tsp Oil

Salt to taste

METHOD
Heat oil in pan. Add jeera and onion. Fry till it turns golden brown. Add ginger garlic paste and saute for few sec. Add all the powders followed by frozen corn. Season with salt and amchur powder. Finally add coriander leaves and lime juice and mix well again. Keep it aside.
In a plate slice the eggs and keep it aside.
Now take one puff sheet and roll them. Cut into halves. (Depends on how much bigger size you need)Take one half sheet and fill the corn mixture  in the center and place one egg slice upon that. Fold over and place them on the greased baking tray. Repeat the same with the remaining sheets.
Meanwhile break the egg in a bowl and mix it well. Brush the egg mixture all over the puffs and bake them under 200 degree preheated oven for 35 to 40 min.

CORN PANEER MASALA DOSA

This is something new and different from our normal masala dosa which come up with potato stuffing. I had stock of frozen corns and small pieces of paneer so taught of making something variety out of it. The combination of corn and paneer is great. This gives a nice crunchy bite. With a touch of coriander leaves & mild spices makes the entire dish fab. This goes well with any types of chutneys or thokku. I served with Capsicum chutney and Sweet potato umman :)

INGREDIENTS

Dosa Batter.

1 Cup Boiled Corns.

1/2 Cup Grated Paneer.

1 Onion

2 tsp Grated Ginger.

1/2 tsp Haldi.

1 tsp Red chilly pd.

1/2 tsp Kitchen king masala (optional)

1 tbsp Coriander leaves.

2 tsp Oil.

Salt to taste.

METHOD

Heat oil in a kadai. Add onions and grated ginger and saute for just 3 to 4 min. Add in the haldi, chilly pd, kitchen king masala and the corns. Once its mixtures up add paneer and coriander leaves. Season with salt. Mix well and remove from fire. Make sure after adding paneer, you don't cook it for long as the paneer becomes hard and dry up very soon. The moisture makes the masala flavourful.
Now keep aside the masala.
Heat Iron tawa or non stick tawa. Pour a ladle of batter in a center and spread in a thin circular motion. (dosa should not be thick) Drizzle with oil or ghee and close with a lid. Once the sides gets brown up, Place the filling on one side as shown in the picture. and fold the dosa into half, closing the masala filling.

Serve hot with ur fav dip.

CORN PULAV

Tried this tasty pulav for the first time and believe me it was a super hit recipe. This pulav is fully loaded with delicious sweet corns with a mild spices. Already if you have cooked rice,it can be prepared in jiffy. This dish not only attract kids but also very nutritious and healthy for them.  Its perfect to pack for lunch box too.

Important note: I have added mint leaves in this recipe. Please make sure not to avoid this special ingredient as the mint leaves always gives a wonderful flavour of freshness to the dish. So make use of this for sure :)


INGREDIENTS FOR COOKING RICE

1 Cup Basmati rice.

2 Cloves

1 Inch Cinnamon stick

1 Elachi

1 1/2 Cup Water.

Salt to taste.

INGREDIENTS FOR FRYING

1 Cup Steamed Corn Kernels.

1 Big Onion (sliced)

1 tsp Ginger Garlic paste.

10 Mint leaves.

Pinch of Kitchen king Masala.

Salt to taste.

Pepper pd top taste.

1 tbsp Ghee.

METHOD

To cook rice :- Soak the washed rice in 1 1/2 cup of water for about half an hour. Add all the rest of the ingredients mentioned above and cook in pressure cooker as you make it. Once the pressure release, open and fluff it up with the help of a fork. Allow to cool.

Heat ghee in a kadai. Add sliced onion and fry till translucent. Next add ginger garlic paste and fry well till the raw smell disappears. Add crushed mint leaves, corn kernels and season them with salt and pepper. Mix the cooked rice and stir well under low flame. Lastly sprinkle with kitchen king masala and again mix well. Serve hot.

CORN FRITTERS


Corn fritters has become one of our family hit snack. The bite of each corns are sweet and delicate. Its just perfect for kiddo's as it looks attractive with less spicy. PEPPERY BABYCORN FRY

Corns, corns, corns. Its corn season these days. My kiddo is very fond of it. So whenever we go for shopping, corn is surly there on our buying list. This time my hubby suggested to take baby corns which was in a bundle. Its freshness made me take over those babies. I had no idea what to do with this as I was taking them for the first time. Thus my hubby came out with a unique and lips smacking dish from an amazing blog. I dont know from which site but I really thank and appreciate that blog for sharing with us.


INGREDIENTS FOR PEPPER MASALA.

1 Small Onion.

2 no Dry Red Chilli.

2 tbsp Black Pepper Corns.

1 tsp Oil.

METHOD.

Heat oil in a pan. Add all the ingredients and fry till the onions turns translucent.


Cool them and grind them into a fine paste adding enough water. Keep it aside.

INGREDIENTS FOR CORN PEPPERY FRY.

10 to 11 no Baby corns.

1 Big Onion.

1 tsp Ginger Garlic paste.

2 springs of Curry leaves.

1 Tsp Turmeric pd.

2 tsp Chilli powder.

1 tsp White pepper pd.

2 tsp Coriander pd.

2 tsp Oil.

2 Cups Water.

Coriander leaves for garnish.

METHOD.

In a pan, bring 2 cups of water to boil. Add salt and a pinch of turmeric pd. Put all the corns and remove from flame. Let it sit for 15 min. Now as the corns are half cooked, slit them into medium thin slice. Keep it aside.

Heat oil in a pan. Fry onions, curry leaves with ginger garlic paste. Add turmeric pd, chilli pd, coriander pd, white pepper pd and stir till the raw smell gets off. Now add the grounded peppery masala with enough water. Finally add the corns and saute well.

Garnish with coriander leaves and serve hot.
