Will the Current Economy Affect Your Holidays?

Well, I started my Christmas shopping this month and I am almost done. Stuck on a few ideas for Mom and my brother. They are always the hardest to buy for. They have everything!

I noticed I am paying attention to the sales more than usual and taking advantage of specials buys. Money is tighter now, not only due to the economic situation we are facing, but also because I've been home recovering from my back surgery.

I'm not just buying gifts because they cost less. I'm looking for the best deal on an item I want.I'm proud of myself for spending half the amount I spent last year (so far) and to be honest, my selections this year are even better.

I also don't buy online until I look for those online coupon codes I have posted about before. Believe me, don't pay for anything until you check out if there are coupons for the store you are buying from. There are coupons for just about every store, so don't think there aren't offers out there. There ARE! I have saved SO much money this way. If you are looking at an item from Amazon, or Best Buy or even JC Penneys...just enter store name + Coupons in your browser and you will see a list of codes available. Do this with every store you intend to purchase from. THe savings will add up.

There are also sites showcasing Black Friday deals expected. The deals are crazy good, so don't do any shopping until you check out the best deal for the item you are looking for. Why spend more, right? Get the best value for your money.

I had a poll on this site in October. My question was: Will the Current Economy Affect Your Holidays? According to my readers responses, most of us are feeling the affects and will spend less.

28.6 % responded they haven't thought about the holidays yet

I am thinking that when the 28.6 % of the people start thinking about the holidays, they will indeed spend less.

Stretching Our Budget

I mentioned in my previous post how I am learning new ways to stretch my budget from watching talk shows.

Oprah had Cristina Ferrare on her show. She showed how by cooking 2 chickens, you can make three or more dinners, which means more meals for less money. These dinners could even be frozen after cooking, so it turns into not only a budget savings, but a time saver as well.

My son hates leftovers, but with these recipes, he won't realize I am using leftovers. These recipes looked so easy and delicious and I know I will be trying them myself. These are worth sharing.

So... you start by making 2 roasted chickens and use the leftovers for other dishes.

Roasted Chicken:
2 chickens , 4 1/2 to 5 pounds each
6 lemons
A poultry mix of fresh herbs: Rosemary, sage, thyme, parsley and oregano work well
Marinade for one chicken:
1 cup Dijon mustard
1/2 cup soy sauce
1/2 cup juice from fresh lemon (don't discard lemon rinds)
To make marinade: Place all ingredients in a nonreactive bowl. Whisk with a wire whisk until ingredients are incorporated well—the marinade should have a smooth and creamy consistency.

To make roasted chicken: Preheat oven to 425°.Clean chickens well and pat dry. Place each chicken in its own baking dish.Stuff cavities with lemon rinds and fresh herbs. A poultry mix is fine, usually consisting of rosemary, sage, thyme, parsley and oregano.Pour marinade over chicken. Add cracked pepper and remaining herbs to the top of each chicken.

Place an oven thermometer in each chicken and cover with aluminum foil. Place on the lower rack of the oven. Bake for 1 1/2 hours, then remove the aluminum foil. Baste with a basting bulb. Keep basting often, ever 15 minutes until the thermometer reads 180°.

Chicken Enchiladas

Ingredients
16 ounce bottle or can enchilada sauce
6 low-fat or fat-free tortillas
1 jar salsa
2 cans refried beans
1/4 cup shredded sharp cheddar cheese
1/4 cup shredded sharp Monterey Jack cheese
1/2 cup low-fat sour cream
1/4 cup kalamata olives , pitted
1 jalapeño , chopped and seeded
Roasted Chicken
Heat oven to 400°.

Pour the can of enchilada sauce into a pie dish. Dip tortillas in the sauce to soften them. On a cutting board, gently spread refried beans on one side of each tortilla. Add enough diced Roasted Chicken to cover the beans. Sprinkle with cheddar and Monterey Jack cheeses. Add olives, chopped jalapeño and salsa (optional).

Roll up the tortillas and place seam-side down in a 9" x 13" baking dish. Blend the sour cream into the remaining enchilada sauce in the pie dish. Pour over enchiladas and sprinkle remaining cheese.

Cover and bake for 25-30 minutes until hot and bubbly.


Chicken Pot Pie with Cornbread Crust
Filling:
1 Tbsp. olive oil
1 Tbsp. unsalted butter
1 medium Onion , chopped
1/4 cup flour
2 cups chicken stock
2 cups chopped Roasted Chicken
1/2 cup frozen sweet petite peas
1 potato , diced and boiled
1 1/2 cup chopped, cooked carrots
1/2 tsp. salt
Cracked pepper
Dash of Tabasco® sauce

Crust:
3/4 cup white or yellow cornmeal
3/4 cup flour
1 Tbsp. baking powder
1 1/2 Tbsp. sugar
1/2 tsp. salt
3/4 cup milk
1 large egg
2 Tbsp. canola oil

To make filling: Preheat the oven to 400°. Spray a 2-quart casserole with cooking spray. In a large sauce pan, heat olive oil and unsalted butter together. Add onion and sauté until tender, about 4 or 5 minutes. Add in flour until blended. Slowly stir in 2 cups of heated chicken stock, whisking well. Cook mixture over medium heat until thickened and bubbly, about 4 minutes. Stir in chicken, peas, potato, carrots, salt, pepper and Tabasco. Pour into a 2-quart casserole dish coated with cooking spray and cook until heated and thickened. Spread evently into an ovenproof dish.

To make crust: In a bowl, stir cornmeal, flour, baking powder, sugar and salt. Stir milk, egg and canola oil until well combined. Stir wet ingredients into dry ingredients. Spoon the batter evenly on the filling. Bake until the top is golden brown, about 22 to 25 minutes.

Pesto with Farfalle Pasta with Roasted Chicken

Ingredients:
4 cups fresh basil leaves
4 cups Italian parsley springs
4 large cloves garlic
1 1/2 cups olive oil
1/4 tsp. salt

Roasted Chicken Salad:
1 cup diced Roasted Chicken
1 cucumber , peeled, seeded and diced
2 cups mixed greens
1/4 cup roasted pine nuts
1/2 lemon , juiced
Parmesan cheese
1/4 cup sliced black olives
1/2 pound farfalle pasta
Handful pomegranate seeds

To prepare the pesto: Chop basil, parsley and garlic in a food processor. Slowly add olive oil and keep chopping. Add salt.

To prepare the chicken mixture and final dish: Place Roasted Chicken, cucumber, pine nuts, 1 Tbsp. of pesto and olives in a bowl and mix together. Cook pasta until al dente. Add 2 tablespoons of pesto to the pasta and mix well. Top off with 2 cups of mixed greens and the juice of 1/2 a lemon. Add the chicken mixture to pasta and toss. Garnish with Parmesan cheese and pomegranate seeds

Do You Shop at the Dollar Store?

While at home recovering from my back surgery, I have been watching ALOT of TV. I'm getting hooked on all the talk shows. I do believe they have gotten better... offering valuable advice, tips and information we can use in our day to day lives for everyday people like you and I.

While watching Rachel Ray, one of her guests was author, Christine Jory, who's new book: The 99 cent store cookbook shows you how to cook Gourmet Recipes at Discount Prices.
I thought this was a great idea, especially with the current economic situation we are all facing. If you think visiting the 99 cent store is beneath you, think again. Stretching our budget is probably on the minds of many people lately and you can save a lot of money by shopping at these stores.

Here in Jersey we have dollar stores and I visit them for party goods or cleaning supplies, but now more and more dollar stores are expanding to include food items. After seeing the Rachel Ray show, I've learned that the food and food items are of the same quality sold at the food stores. Spices, canned foods, meat, cleaning supplies and in some cases, wine.. Maybe the product has a misprint on the label, an expiration date of weeks or months...why should I spend $3, $4 or even more for an item that will cost only a dollar at the dollar store? I could see how the savings will add up.

My next visit to the dollar store will include more items on my food shopping list and I want to see if I can really save using these dollar stores verses my usually food store.

eBay To The Rescue

I know you are all familiar with eBay and I was wondering how many actually use their site?

I really never used Ebay to shop for anything before. Surprising I know...

My son had used eBay to sell items and he was completely satisfied with his experience. He made a ton of money selling sport related items.

The other day while putting on one of my favorite perfumes, I realized the bottle was just about empty. I wear this perfume mostly in the spring/summer. It's a perfume I had bought from MaryKay awhile ago and I know they don't make it anymore.I always see advertisements for eBay and decided to take a look.

To my surprise I found several sellers offering this perfume. I placed a bid and in the end I won. For $6 and a few bucks for shipping, I'll be receiving a full bottle of my favorite perfume. What a bargin!

The Food Store is a Trap!

Why is it that when I went to the food store today, I bought more than what was on my list...again? This happens all the time. I go in for just a couple things and I walk out with a few bags ! That means, I've spent more than I intended to.

Do you have this problem too?

I decided that I should NEVER go into the food store whether it's for a few things or a week's worth while hungry. The smell of the baked goods drive me crazy and makes me even hungrier, so I think I buy more.

Then you have the deals that you see...those big SALE signs or the two for sales. I think that makes you be alittle bit impulsive, don't you? The food store is not the only place I impulsively shop. How about when you're clothes shopping and you see those very same signs...you tend to buy. The stores make us take the bait and then they reel us in.

Another way I think will put an end to buying more is to stick to my list and only go into the isles I know have what I'm looking for. If I start to wander down other isles, I see something I 'think' I need and just put it in my cart.

I came home today, unpacked the bags and thought...why the heck did I buy that?...I didn't need it. Now I feel like I wasted money that I could have used for something else. Not that the item won't be used, but probably not for awhile. It could have waited...

The food store is a trap..haha...

You're Never Too Old...

Ok, so at age 50... well almost, I am considering doing something I have always wanted to do. You may be surprised at what I'm about to say, but I have always wanted to try paintball.

My friends who have gone, always come back from paintballing with great stories and share how much fun it is. I guess I still have a bit of tomboy in me from when I was little.

I'm told I do need to wear protective paintball clothing because when getting hit with paintballs, they hurt. Well, I do not intend to get hit by any paintballs..ha

My son and a group of his friends are getting together to reserve a paintball field, so I asked if I can join them. I am trying to talk my son's girlfriend into going with me.

He just visited the Ultimate Paintball site and purchased this Tippmann 98. He always has to have the best when doing something. He said he'd rather buy his paintball gear than rent it. This way he'll have it for another time instead of spending money 'renting' paintball equipment. Makes sense...and it'll save him money in the long run.

Planning a Vacation This Summer?

Shopping for My Gift

My son's Mother's Day gift to me was a gift of my choice. He wasn't sure what I wanted or needed, so he said that since I have been doing alot of online shopping while I have been home, to buy something I wanted.

Soooo, going straight to ShopWiki.com, I knew I would find something I wanted, plus find a good deal. By the way, if you are not familiar with ShopWiki, this site shows you ALL the best stores and their

You're probably aware of those online shopping sites that when you search for an item they give you a result listing of some stores. Confused by Insurance Options?

When it comes to insurance, there are so many options. You can insure just about anything these days. People often think that it's better to be safe than sorry, but sometimes end up spending more money than they should on coverage they don't really need. If you own a business, there are options for Business Insurance as well.

You should cover the big risks in your life. Those being your life, your health, your home and your car if you have one.

You can save money on insurance. Shopping around for the best deal is one good way. Companies also give discounts to customers who buy more than one type of coverage from them. Raising your deductible will lower your insurance monthly payment. You should make sure that you have coverage that's both comprehensive and covers catastrophic events that would cause hardship, such as the death of a spouse.

According to Robert Hunter, director of insurance for the Consumer Federation of America, there are common types of insurance that he and other experts believe people should avoid:

Life insurance for children- Losing a child, may be the hardest and toughest experience a parent can go through, but the experience does not lead to economic hardship. I would think you do not rely on your children to provide income for your survival.

Cancer insurance- This policy does cover one risk, but it is better to just have good insurance. Death comes in various ways...why pay for protection just for cancer?

Accidental death- Again, this is covering a risk, but having a good policy will be adequate. Unless, you are in a dangerous profession.

Travel insurance- This coverage would only be useful if you are aware of a serious illness or if you would not be able to reschedule.

Whole life insurance- Term insurance provides an investment option that might be a better choice. If you have a spouse working from home, make sure they are also covered due to their death causing a financial hardship.

Insurance against inconveniences- Are they really worth paying monthly for? Would it be the end of the world? Probably not...

Identity theft-Reguarly check your credit report, which can be done for free. Take precautionary steps to avoid someone being able to access your personal information.

Insuring your clunker- It doesn't make sense to have full insurance coverage on an old car unless of course it is a classic and worth a lot of money. If your old car gets totaled in an accident, you will only receive the value regardless. Would your monthly payments over the years exceed the value?

Extended warranties- Quality purchases should not fail while under warranty

Payment protection insurance- You pay a lot of money each month for this protection. This coverage pays your credit card or mortgage payments in case of illness or job loss, but what you have already and will continue to pay be more than having made sure you had just saved enough for a 'rainy day'?

If you own one of the above policies, you may want to reconsider. Is this policy truly necessary in protecting you from a financial hardship? If it isn't, why throw your hard earned money toward a monthly expense?

Do You Buy Online?

I love to shop and when I find a coupon that saves me money, I am even more thrilled. I have been doing a lot of buying online since there doesn't seem to be enough hours in the day to physically go to the store.

My son's birthday is coming up and I found a site that offers Coupon Codes to a large number of stores.
