Elachi Shrikhand Recipe | Summer Recipes



 Having a sudden guest to your house in this summer and don’t know what to serve instead of tea or coffee. Shrikhand is a great cool alternative which can be prepared in minutes. All you have to do is to have hung curd prepared in advance. You can keep giving this cool and healthy thirst squasher to your kids and family instead of chemical based cool drinks.

Preparation Time: 5 mins  |  Serves: 2-3
Ingredients:
Thick Curd / Yogurt
2 cups
Sugar
½ cup or required
Cardamom Powder
¼ tsp
To Serve:

Chopped Badam
1 tsp per serve

Procedure:
Hung Curd:
1. Take a wide bowl and keep juice strainer over the bowl.
2. Pour the curd over the strainer.
3. Close the strainer with plate.  
4. Now keep this bowl with the strainer in a refrigerator for 5-6 hrs or overnight.
5. Now you can get a thick cheese like curd.
How to make Shrikhand?
6. In a bowl, add thick curd (from 5), sugar and cardamom powder. Mix them well with whish or ladle.
7. Serve one scoop of this curd and top it with chopped nuts.

     Yummy and delicious dessert is ready to serve.

Note:
1. You can use any dry fruits for topping.
2. You can use powdered sugar instead of granulated sugar.
3. Adjust the sugar level according to your taste.

Yogurt and Fruit Parfait Recipe | International Recipes



Parfait is a French style layered dessert. We have to use different fruits and creams for creating different layers. In this recipe, I used fruits and yogurt for creating the layers. Parfait is always very attractive and kids gonna love it. Parfait is the nice way to make kids have even fruits they don’t like. Just put them in a intermediate layer.

Preparation Time: 10 mins  |  Serves: 2

Ingredients:
Thick Curd / Yogurt
½ cup
Honey
1 tbsp
Sugar
1 tbsp
Chopped Fruits (mango, banana, papaya, etc.,)
¼ cup
Chopped Badam
1 tsp

Procedure:
1. Add curd, honey and sugar in a bowl. Mix them well and refrigerate for 2-3 hours.
2. Remove the skin of the fruits and chop them into small pieces.
3. Take a long glass jar, first add 2 tbsp curd and then add 2 tbsp fruits.
4. Again add curd and fruits.
5. Again add curd and fruits.
6. Finally sprinkle chopped badam and serves it immediately.

Note:
1. Fruits are your choice.
2. Add 2 tbsp of honey instead of sugar and vice versa.

Lebanese Cucumber Yogurt Cold Soup Recipe | International Recipes



We eat cucumber mostly as it is. I came across this recipe and immediately tried it. This soup enhances the taste of cucumber significantly. My family gobbled them up quickly. Lebanese cucumber cold soup is nice refreshment for the summer.

Ingredients:
Cucumber
1
Curd / Yogurt
1 cup
Water
1 cup
Garlic Pods
2
Mint Leaves
10
Salt
To taste
Lemon Juice
1 tbsp

Procedure:
1. Peel the skin of the cucumber using the peeler.
2. Grate the cucumber using the grater.
3. Wash and chop the mint leaves into small pieces.
4. Remove the skin of the garlic pods and grate them using the fine grater.
5. Take lemon juice from 1 lemon without it seeds.
6. In a wide bowl, add grated cucumber (from 2), curd, water, garlic (from 4), mint leaves (from 3), salt and lemon juice (from 5).
7. Mix them well with wire whisk till they combined very well.
8. Keep this mixture in the refrigerator for 2 hours and then serve.

Note:
1. Adjust the salt level according to your taste.
2. You can serve at room temperature also.
3. If you can use chilled cucumber and chilled curd, then no need to refrigerate.

Idiyappam Bagala Bath / Thayir Santhagai / Curd String Hooper




     Idiyappam Variants are usually Lemon, Tomato and Coconut Milk. Curd Santhagai can also be another good variant just like Curd Semiya. This is quick to make one more variety for Idiyappam base.

Ingredients:
Idiyappam (Click here for Homemade Santhagai Recipe)
2 cups
Curd
¾ - 1 cup
Milk
1/2 cup
Salt
To taste
To Grind:

Green Chilli
2
Ginger
1 inch
To Temper:

Coconut Oil
1 tbsp
Mustard Seeds
½ tsp
Urad Dal
½ tsp
Cashew Nuts (optional)
10
Curry Leaves
1 spring
Asafoetida / Hing
¼ tsp
Dry Grapes
2 tsbp
To Garnish:

Chopped Coriander Leaves
1 tbsp

Procedure:
1. Grind green chillies and ginger into a coarse paste without water. Keep it aside.
2. Add coconut oil in a pan, add mustard seeds and urad dal. Wait for popping.
3. Then add curry leaves and cashew nuts and sauté till they become golden color.
4. Add hing and sauté for a min.
5. Now add the ground paste (from 1) and fry till the raw smell goes off.
6. Finally add the dry grapes and fry till they become swollen . Allow it to cool down completely.
7. Then add this temper (from 6), milk and curd into the string hoopers. Mix them gently.
8. Garnish with chopped coriander leaves and serve.

Note:
1. Use any odorless oil instead of coconut oil.
2. Adjust the curd and milk level according to your taste.
3. Use any type of string Hooper.

Kesar Lassi / Saffron Lassi

     Entire India is reeling under heat wave as temperature is crossing 40 degrees centigrade all over the place. Drinks like Lassi is very important to maintain health and increase energy level. Kesar / Saffron Lassi is a lassi variant with great aroma and slightly different taste.

Preparation Time: 5 mins  | Yields: 1 ¼ cup

Ingredients:
Thick Curd
1 cup
Sugar
3 tbsp
Lukewarm Milk
¼ cup
Saffron Strings
5-7
Yellow Food Color (Optional)
Few drops

Procedure:
1. Add saffron with lukewarm milk. Leave it for 7-10 mins. Then stir them well.
2. Now add sugar with curd and mix them well with wire whisk till the sugar dissolves completely.
3. Add the saffron mixture (from 1)  with curd mixture (from 2). Mix them well.
4. Add food color and mix well. Then kesar lassi is ready to serve.
          Aromatic and colorful lassi is reday to serve.

Note:

1. You can use chilled curd or refrigerate the lassi for half an hour and then serve. Otherwise serve it at room temperature.

Orange Yogurt Smoothie with Mixed Fruits

      Yogurt and Orange combination gives a very sweet and sour taste to a mixed fruit smoothie. The Aroma of Orange also makes the smoothie very tempting. A Bread Sandwich along with this smoothie will be a very energetic and filling breakfast.

Preparation Time: 7 mins  | Yields: 2 cups

Ingredients:
Chilled Yogurt / Curd
1 cup
Orange Juice / Orange
1 cup / 2
Apple
1/2
Banana
1
Fig
2
Sappota /Chikku
2

Procedure:
1. Remove the skin of the banana and cut it into small pieces.
2. Peel the skin of the apple and chop it into small pieces.
3.  Peel the skin of the fig and sppotta and chop them into small chunks.
4. Extract the juice from the orange and keep it aside.
5. Grind all the fruits (from 1 – 3), orange juice and yogurt into a smooth paste using the blender or mixie. Serve it immediately.

Note:
1. You can use store bought orange juice also.
2. I have used chilled yogurt but you can use without chillness.
3.  I have used fresh orange juice and orange pulp without seeds.
4. Use any fruits instead of Apple, Fig and Sappotta.
