Milk Balls Recipe | Easy Dessert Recipe | 3 Ingredients Recipe | Kurinji Kathambam

Preparation Time: 5 mins  | Cooking Time: 5-7 mins | Total : 13 Balls

 

Ingredients

Milk – 200 ml (boiled cold mild)

Corn Flour – 6 tbsp

Sugar - 3 tbsp

Salt – ¼ tsp

Coco Powder -2 tbsp

 

Procedure:

1.         Add milk, corn flour, sugar and salt in a non stick pan.

2.      Mix them well without lumps.

3.      Bring them to boil. Cook in a medium flame. Mix them continuously .

4.      Cook till the mixture becomes soft dough like chapathi dough.

5.      Transfer to another bowl and allow it to cool down.

6.      Knead the dough to make soft consistency. Make gooseberry size balls from the dough.

7.      Arrange the balls on the serving plate.  For garnishing, Dust the coco powder over the balls and serve.

Red Aval (poha) Laddu Recipe | Gokulashtami Recipes



The aval recipe is a mush have recipe for Gokulashtami. I have already posted white aval laddu recipe. But this recipe is a more healthier yet tasteful aval recipe. Why not try this for this Gokulashtami?

Preparation Time: 5 mins  | Cooking Time: 5 mins | Yields: 8 Laddus
Ingredients:
Thick Red Aval
½ cup (1 cup =  240 ml)
Sugar
¼ cup
Ghee
2 tbsp
Chopped Mixed Nuts
1 tbsp
Cardamom Pods

Procedure:
1. Dry rost the poha till nice aroma comes out from it or till the poha becomes crisp.
2. Allow it to cool down completely and grind them into a fine powder using the dry mixie jar. Keep it aside.
3. Powder the sugar and cardamom together into a fine powder using the same mixie jar.
4. Now mix the both the powders in a wide bowl using the spatula or wire whisk.
5. Heat the ghee in a pan, fry the nuts till they become golden color.
6. Now pour the hot ghee over the poha and sugar mixture (from 4).
7. Immediately mix them quickly with spatula. At one stage the mixture looks like a bread crumbs.
8. Immediately make gooseberry size balls from the mixture. You have to make the balls when the mixture is little bit hot, otherwise the balls will break down.
 Healthy and yummy red aval / Red Poha / Red Riceflakes Laddu is ready to serve.

Note:
1. Powder the aval first before powdering the sugar.
2. Do not pour more ghee than the ratio suggested. Otherwise the balls will not be dry and in perfect shape.
3. Nuts are optional or otherwise your choice.

Mango Kesari Recipe / Mango Sheera Recipe | Mango Recipes



In summer TV is full of cool drinks especially mango based.
I am encouraged by the success of mango pappu and have decided to try many mango recipes. In this line, Mango Kesari is a very good addition and its special flavor definitely adds to the kesari’s sweetness.

Recipe Cuisine : South Indian | Recipe Category: Sweet
Preparation Time: 3 mins  | Cooking Time : 20 mins |  Serves: 2
Ingredients:
Rava / Semolina / White Rava
¼ cup
Sugar
¼ cup
Mango Pulp
¼ cup
Ghee
1 tbsp
Cardamom Powder
¼ tsp
Cashew Nuts

Procedure:
1. Roast the rava with 1 tsp of ghee till the nice aroma come out. Keep it aside.
2. Grind the mango pulp with sugar into fine paste. Keep it aside.
3. Heat ¾ cup of water in a heavy bottom pan.
4. When the water starts boiling, keep the flame at simmer.
5. Add the roasted rava (from 1) little by little and mix them with ladle continuously.
6. Cook the rava till they become thick.
7. Add ground mango mixture (from 2) and cardamom powder; mix them quickly. The mixture becomes thin and lumps also occur. Don’t worry about the lumps. Stir the mixture continuously to avoid the lumps.
8. Meanwhile, heat the remaining ghee in a pan, fry the cashew nuts till the nuts become golden in color. Keep it aside.
9. The Kesari mixture (from 7) becomes thick and without lumps, add the fried cashews with ghee.
10. Cook till the mixture becomes thick and comes together.  Switch off the flame and serve it hot.
              Yummy and delicious Mango Kesari / Mango Sheera is ready to serve!

Note:
1. Adjust the sugar level according to your mango sweetness.

2. Use less fiber mangoes. I have used senthura mango pulp.
3. Add 2tbsp ghee instead of 1 tbsp.
4. Uase cardamom instead of cardamom powder. If you can use cardamom pods, grind the pods with mango and sugar mixture.

Elachi Shrikhand Recipe | Summer Recipes



 Having a sudden guest to your house in this summer and don’t know what to serve instead of tea or coffee. Shrikhand is a great cool alternative which can be prepared in minutes. All you have to do is to have hung curd prepared in advance. You can keep giving this cool and healthy thirst squasher to your kids and family instead of chemical based cool drinks.

Preparation Time: 5 mins  |  Serves: 2-3
Ingredients:
Thick Curd / Yogurt
2 cups
Sugar
½ cup or required
Cardamom Powder
¼ tsp
To Serve:

Chopped Badam
1 tsp per serve

Procedure:
Hung Curd:
1. Take a wide bowl and keep juice strainer over the bowl.
2. Pour the curd over the strainer.
3. Close the strainer with plate.  
4. Now keep this bowl with the strainer in a refrigerator for 5-6 hrs or overnight.
5. Now you can get a thick cheese like curd.
How to make Shrikhand?
6. In a bowl, add thick curd (from 5), sugar and cardamom powder. Mix them well with whish or ladle.
7. Serve one scoop of this curd and top it with chopped nuts.

     Yummy and delicious dessert is ready to serve.

Note:
1. You can use any dry fruits for topping.
2. You can use powdered sugar instead of granulated sugar.
3. Adjust the sugar level according to your taste.

Shir Berenj / Afghan Rice Pudding | Afghan Recipes | International Recipes



Afghan Rice Pudding is very similar to our payasam or kheer. But the main difference is that they add jam on the top instead of sugar. This is an easy to make International dessert at home.

Recipe Cuisine : International / Afghan | Recipe Category: Pudding / Dessert
Preparation Time: 5 mins  | Cooking Time: 15 mins | Yields: 2-3 cups

Ingredients:
Basmathi / Jeeraga Samba / Raw Rice (pacharisi)
¼ cup
Water
¼ cup
Boiled Milk
2 cups
Salt
¼ tsp
Rose Water
½ tsp
To Garnish:

Mixed Fruit Jam
2 tbsp
Sliced Badam
2 tbsp

Procedure:
1. Wash and soak the rice with ¼ cup of water for 15-30 mins.
2 Add the soaked rice with soaked water, 1 cup of milk and salt in a pressure cooker.
3. Pressure cook them for 1 whistle in high flame, then reduce the flame to simmer and them cook for 3 more whistles.
4. Allow it to cool down completely and smash the rice with ladle.
5. Add the remaining milk and rose water, mix them well. Transfer them to the serving bowl and refrigerate for 30 mins to 1 hr.
6. Then pour this mixture in a serving bowls or glasses.
7. Pour 1 tbsp of jam at the center of the each glass.
8. Sprinkle the sliced almonds over the pudding.
   Yummy and delicious Afghan’s Rice Pudding / Shir Berenj is ready!

Note:
1. The consistency of the rice mixture should be like  kheer consistency. So adjust the milk according to that consistency.
2. You can serve either with or without cooling.
3. You can replace rose water with cardamom pods.
4. You can cook the rice using the pot too (no need to pressure cook).
5. You can also use normal cooked rice.



Swedish Chokaladbollar (Oats Chocolate Balls) | Swedan Recipes | International Recipes



Oats is a healthy ingredient. Swedish oats chocolate balls adds the sweetness of chocolate to it and make it attractive for kids.

Preparation Time: 10 mins  | Yields: 10 balls
Ingredients:
Oats
1 cup ( 240ml)
Sugar
¼ cup
Butter
1 tbsp
Coco Powder
1 tbsp
Warm Filter / Instant Coffee Syrup*
2 tbsp
Salt
¼ tsp
Vanilla essence
1 tsp
Coconut Powder or Desiccated Coconut (Recipe  HERE)
2 tbsp

* Use 2 tbsp of filter coffee or mix 1 tsp of instant coffee powder with 2 tbsp of warm water.

Procedure:
1. Grind the oats, sugar, salt and coco powder into a fine powder using the dry mixi jar.
2. In a wide bowl, add warm coffee syrup, vanilla essence and butter. Mix them well.
3. Add powders oats mix (from 1) and mix them well with your fingers. Then knead it into a soft dough like chapathi dough.
4. Make gooseberry size balls from the dough and keep it aside.
5. Now spread the coconut powder on the dry plate.
6. Roll the balls over the coconut powder.
    Yummy, healthy and kids friendly Oats chocolate coconut laddu is ready!

Note:
1. Suppose the dough is sticky, you can add little bit oats powder.
2. The dough is too thick, you can add little bit coffee syrup or warm water.
3. Suppose oats is not crispy, dry roast them for 2 mins and then powder it.
