A Spicy Mexican Style Mango Recipe / Mango con Chile y Limon



Innovative recipes are those which have a twist in taste – mixing of two different taste like sweet and sour together. A Spicy Mexican mango is one such recipe which mixes the sweetness of Ripe Mangoes with spicy red chilli powder and lime juice. Even though this very similar very similar to instant mango pickle recipe, the combination of sweet and spiciness in this recipe gives it a very unique and addictive taste. This is so famous in Mexico as it is a popular street food.

Preparation Time: 5 mins  |  Yields : 1 cup
Ingredients:
Ripe Mango
1
Red Chilli Powder
1 tsp
Salt
½ tsp
Lemon Juice
2 tsp

Procedure:
1. Wash and remove the skin of the mango. Then remove the seed from it. Cut the flesh into small cubes.
2. Put the mango cubes in a wide bowl.
3. Sprinkle red chilli powder and salt over the mango cubes.  Toss them gently.
4. Pour the lemon juice over the mango cubes. Again toss them gently for few seconds.
       Wow spicy and yummy Mexican Mango con Chile y Limon is ready. Serve it immediately.
Note:
1. Adjust the red chilli powder level according to your taste.
2. Adjust the salt level according to your taste.

Mango Kesari Recipe / Mango Sheera Recipe | Mango Recipes



In summer TV is full of cool drinks especially mango based.
I am encouraged by the success of mango pappu and have decided to try many mango recipes. In this line, Mango Kesari is a very good addition and its special flavor definitely adds to the kesari’s sweetness.

Preparation Time: 3 mins  | Cooking Time : 20 mins |  Serves: 2
Ingredients:
Rava / Semolina / White Rava
¼ cup
Sugar
¼ cup
Mango Pulp
¼ cup
Ghee
1 tbsp
Cardamom Powder
¼ tsp
Cashew Nuts

Procedure:
1. Roast the rava with 1 tsp of ghee till the nice aroma come out. Keep it aside.
2. Grind the mango pulp with sugar into fine paste. Keep it aside.
3. Heat ¾ cup of water in a heavy bottom pan.
4. When the water starts boiling, keep the flame at simmer.
5. Add the roasted rava (from 1) little by little and mix them with ladle continuously.
6. Cook the rava till they become thick.
7. Add ground mango mixture (from 2) and cardamom powder; mix them quickly. The mixture becomes thin and lumps also occur. Don’t worry about the lumps. Stir the mixture continuously to avoid the lumps.
8. Meanwhile, heat the remaining ghee in a pan, fry the cashew nuts till the nuts become golden in color. Keep it aside.
9. The Kesari mixture (from 7) becomes thick and without lumps, add the fried cashews with ghee.
10. Cook till the mixture becomes thick and comes together.  Switch off the flame and serve it hot.
              Yummy and delicious Mango Kesari / Mango Sheera is ready to serve!

Note:
1. Adjust the sugar level according to your mango sweetness.

2. Use less fiber mangoes. I have used senthura mango pulp.
3. Add 2tbsp ghee instead of 1 tbsp.
4. Uase cardamom instead of cardamom powder. If you can use cardamom pods, grind the pods with mango and sugar mixture.

Cuban Mango Mojo | Mango Recipes



Mango is famous for sweet and sour taste combination. However in most of our mango recipes we add sugar and to make it very sweet. Mango mojo is different such that it makes the dish a tangy taste - sweet, sour and also spicy. In Cuba they use Mango Mojo as Sauce for marinating chicken and fish. But we can use it as just spread.

Preparation Time: 10 mins  | Cooking Time: 2 mins | Yields: 1 cup

Ingredients:
Ripe Mango Cubes
2 cups
Sugar
1 tbsp
Salt
½ tsp
Pepper Powder
½ tsp
Orange Juice
1 tbsp
Lemon Juice
1 tsp
Oil
1 tsp
Finely Chopped Onion
1 tbsp
Finely Chopped Garlic
1 tsp
Grated Ginger
1 tsp
Finely Chopped Coriander Leaves
1 tsp

Procedure:
1. Heat the oil in a pan, add chopped onion and garlic. Fry till they become translucent.
2. Then add the grated ginger and switch off the flame. Allow it to cool down completely. Keep it aside.
3. Wash and remove the skin of the ripe mango. Then cut it into small cubes. Discard the seeds.
4. Grind the mango cubes into fine paste using dry mixie jar.
5. Now add the fried onion mixture (from 2), orange juice, lemon juice, sugar, salt and pepper powder.
6. Again grind them into fine paste without water.
7.  Now transfer this mixture into serving bowl.
8. Then add the finely chopped coriander leaves and mix them well.
     Hmmmm yummy and delicious Cuban Mango Mojo is ready to serve. Serve it as a spread for bread, chapathi, dosai, etc.,

Note:
1. Use ripe and sweet mango for this recipe.

Papaya Mango Juice


Those who don’t like papaya juice mix it with mango is good way to make them consume papaya. The juice will be as good as pure mango juice and papaya will not drastically saying the taste.

Ingredients:
Papaya Pieces
1 cup
Mango Pieces
1 cup
Sugar
As needed
Water
As required

Procedure:
1. Wash and remove the skin and seeds of the papaya. Then cut it into small cubes and keep it aside.
2. Wash and remove the skin of the mango. Cut the flesh from the mango and chop them into small pieces.
3. Add equal amount of papaya and mango pieces in a mixie jar.
4. Then add sugar and grind them into fine paste. Add little water if needed.
5. Now strain the juice using the juice strainer and add enough water to bring the paste into juice consistency.
   Serve it at room temperature or refrigerate and serve.
Wow yummy and healthy juice is ready !

Note:
1. Adjust the sugar level according to your taste and fruits taste.

Mango Fro Yo | Mango Recipes


We prepare Ice creams, popsicles, juices etc., during summer to beat the heat. Milk based recipes always make us have more guilt free. Mango Fro yo [Mango Frozen Yogurt] is a curd based recipe like ice cream but with the touch of curd.


Recipe Cuisine : International | Recipe Category: Dessert
Preparation Time: 10 + 6 hrs | Yields: 2 cups

Ingredients:
1 cup
Ripe Sweet Mango Cubes without skin
1 cup
Sugar
¼ cup
Cardamom Pods

Procedure:
1. In a dry mixie jar, add mango cubes, sugar and cardamom pod.
2. Grind them into a smooth paste without water.
3. Now add the hung curd and again grind them into a smooth paste without water.
4. Transfer this paste into a freezer safe box and close the lid of the box.
5. Keep the box in the freezer for 2-3 hrs.
6. Then take it out from the freezer and blend the frozen paste once again.
7. Again transfer to freezer box and close the lid of the box. Freeze it for 2-3 hours.

9. After 3rd time freezing is the last step. Now you can get the creamy mango frozen yogurt. Scoop them carefully and serve.
    Enjoy this summer with healthy and yummy Mango Fry Yo.

Mango Sweet Paratha

     My kid likes Chapathi dishes very well. So I have been experiments with different type of chapathis/paratha recipes. Recently we bough lot of naturally ripened mangoes from Uzhavar Santhai (farmers market) in my native place. I wanted to try a different recipes with these mangoes.  
     Mango Sweet Paratha was one of those recipes which became very big hit not only with my family but my neighbors also.
     Don’t  miss trying this recipe because kids really will love this.

Preparation Time: 10 mins  | Cooking Time: 5 mins | Yields: 7 (appx.)

Ingredients:
Ripe Mango
2
Wheat Flour
As Required
Sugar
1 tbsp
Salt
A pinch
Oil
For make parathas

Procedure:
1. Remove the skin of the ripe mangoes. Scoop out the pulp from mangoes.
2. Grind them into a fine paste using the mixie jar.
3. Then add the sugar and salt. Again grind it into a fine paste.
4. Transfer the paste into a bowl.
5. Now add the wheat flour little by little and knead it into soft and pliable dough. No need to add water to knead the dough.
6. Leave it for 10 mins. Make lemon size balls from the dough. Roll the balls into thin circles using the rolling pin. Use wheat flour for dusting.
7. Heat the tawa and transfer the paratha (rolled circles), sprinkle the oil and cook both sides till the black spots starts.
                                      Tasty and aromatic paratha is ready.
