Oh, summer produce, why would you leave me?

I know, pumpkins and winter squash are coming, but I can still pout.
On Saturday, I was contemplating sleeping in and was out of sync with meeting friends at the Saturday farmer's market, but I still made a point of going. Reminding myself of sweet, perfect, affordable, hanging onto the end of season tomatoes, melons, corn and the love of my life...or summer...sweet bell peppers.
I came home with giant yellow bell peppers ($1 each), a mostly red jalapeno, roma tomatoes ($1/pound!), red slicing tomatoes, 3 different colored eggplants (green, purple and white/purple), a peach that I used in pancakes this morning and more - including an assortment of wholesome, candy-licious cherry tomatoes from this booth...

cherry tomatoes!

I've been dusting them with sea salt and just popping them in my mouth.
Simple salad.

Sundried tomato, roasted red pepper and mushroom risotto (VWAV)
Steamed broccoli
Fatfree english muffin
Roasted red pepper marinara

Leftover risotto & broccoli plate at work the next day.
trying to make my coworkers jealous...

Whole wheat penne, roasted red pepper marinara, roasted bell peppers and eggplant, 'parmesan'

Yikes, summer ending has me saying goodbye to natural light:
Mexican tofu scramble, Trader Joe's poppyseed chips (ick)

Grilled BBQ tofu, side salad, grilled corn and hash browns.

Just a bit of simple greatness - Crispy Salt and Pepper Tofu
from Veganomican - just about a month away now!

Well, what summer fruit or vegetable are you saddest to see go?
