Teochew Vegetarian Rolls / Kwang Chian 潮州灌腸 /光煎

This was a vegetarian dish that I cooked during CNY. Usually we practise full day vegetarian meal on CNY day 1. And i always just cook Loh Hon Chai to enjoy through out the day. But this year, i cook an extra new dish, a Teochew traditional snack called Kwang Chian after i saw a recipe in Chinese newspaper. I have never had this snack before, after tasted it, i just simply like this snack, taro and Chinese five spices nice fragrance, crispy beancurd skin after deep fried, nice aroma of peanuts, yum yum.

Chinese style Braised Orange Duck 香橙焖鸭肉

This was one of the dish that i cooked during CNY, even brought to a family gathering. I just simply twisted from the French cuisine orange duck breast to this Chinese version. I am glad that it turned out good especially the gravy has a bit of tangy flavor from the oranges used.

Sweet and Sour Pork 咕嚕肉

Gu Lao Rou a.k.a Sweet and sour Pork a classic Chinese dish. Every Chinese mother have their own version. This is my version of sweet and sour pork. Personally i prefer to use pork belly for this dish, more tender and nice taste of fat after deep fried, yum yum. Also try not to omit pineapple in this recipe too, it give fruity sweet and add colour to this dish.

Tempura Stuffed Lotus Root 炸莲藕盒

I always feel bad when i need to throw away lotus roots after we enjoyed the lotus root soup, as kids didn't like it. So I like this idea of using it to deep fry, we have to eat them all.

Fan Choy a.k.a steamed rice 饭菜

I saw this Fan Choy in Honey Bee Sweet's IG. According to her, Fan Choy is a common breakfast in Singapore. It does look like Lor Mai Gai 糯米鸡 , but Fan Choy is consists of Char Siew (BBQ meat) and Hard- boiled eggs steamed with rice or glutinous rice.  I love everything with glutinous rice, immediately I make this Fan Choy ^_^.

Chinese Fried Dumplings with Sweet and Sour dipping sauce 炸饺子和酸甜酱

If just eating fried dumplings alone, I feel is a bit plain, usually I prefer to cook a small bowl of sweet and sour sauce to dip with the fried dumplings. My kids can't have enough if I prepare this dumplings.

Chinese stir-fried potato strips 洋芋叉叉

This was my first time tried out this simple Chinese potato dish. According to here, 洋芋叉叉 is a popular Chinese potato dish.  I use the cast iron wok to stir fry this potato dish, and we can smell the smoky aroma (wok hei) ^_^.

Bandit Chicken Wings 土匪雞翼

From a TV food show, I learnt that this 土匪雞翼 (direct translate become Bandit Chicken Wings) is very famous now in Hong Kong. This roasted chicken wings using one of the most important ingredient in the recipe is Cumin powder 孜然粉.
I don't know why this roasted chicken wings named as Bandit chicken wings , but according to here, those bandit robbers not only robbed  luxury items but also household spices. The local people who stayed a few miles away can smell the nice aroma of the wings when the bandit robbers used the spices to roast chicken wings.  Thus they would know those bandits were not far from them and they could take precautions of those bandits.

Economic Fried Bee Hoon (Fried Rice Vermicelli) 经济炒米粉


Economic fried bee hoon (simple stir fried rice vermicelli) is a typical breakfast for Malaysian Chinese and I guess Singaporean also eating this way. The most economic version is just simple fried mee hoon, and pour with some curry sauce and sambal chili. If you want more luxury version, you can ask to add fried luncheon meat, fish balls, sausages and fried egg with extra money. Like my version here is consider luxury version of Economic fried bee hoon ^_^.

Claypot Luffa gourds, Black fungus and Fish Maw 胜瓜云耳浸鱼肚

We tried a similar dish in a restaurant that only know by the local during our trip to Macau. This was a typical Cantonese style of home cook dish. Since I still have some dried fish maw leftover from CNY, quickly try this dish at home. To get this dish taste nice, the good stock is important.

Lychee Pork 荔枝肉


When my daughter enjoying this dish, she keep saying this is tooooo yummy and non-stop eating..Maybe due to she likes lychee a lot ^_^. Anyway, I have to agreed with her, this dish is full of flavours, sweet, sour and savoury, something like sweet and sour pork. And love the juicy lychee hide inside the pork balls. Lychee is in season now, it is cheap and fresh, quickly to get some to try this out.
Lychee pork is a famous traditional Hokkien dish, especially Fu Zhou peoples like to cook it. A thin slice of pork to wrap with fresh lychee, to reassemble like a lychee shape ( you can use canned lychee but prefer to use fresh lychee). Sometime, people also replace lychee with pineapple or water chestnut.

Sweet and Sour Pork Ribs 紅燒排骨

 
Recently I just upgraded the private TV channels (Astro) to include few new channels. And i found one interesting channel mainly use Hokkien dialect (HHD). I am not interest on those drama but I love to watch their food show that more sharing on Hokkien cuisines. I learnt this sweet and sour pork ribs from a show that shared by a owner of a restaurant mainly serve Foochow cuisines. I know how to cook sweet and sour pork, but this recipe I tried has very nice and crispy deep fried pork ribs. Even the dish has cooled down, the deep fried pork ribs still taste a bit crispy.

Foochow Red Rice Wine Mee Sua Soup 福州红糟酒面线

Special Thanks to my blogger friend May who brought me this Foochow red rice wine and Mee Sua (thin and salted rice noodles), so we have a chance to try this authentic Foochow Ang Jiu Mee Sua at home. Foochow peoples especially like to cook this Ang Jiu Mee Sua during confinement time (after delivered baby) . And every Foochow grandmother also know how to make this red rice wine at home.

Buddha Jumps Over The Wall 佛跳牆~~欢喜过马年

Last year I challenge myself to make Poon Choi ( Big Bowl Feast )  盆菜 during CNY, and this year I did this Buddha Jumps Over The Wall 佛跳牆. My version is easy and simple version, total only 8 ingredients. I omitted shark fin as my husband already "Finished with fins" ^_^ and we not really fancy with abalones. Why this dish called Buddha Jumps Over The Wall? Because of the good smell, it made Buddha break out of this meditation and jump over the wall of the restaurant next door which served good wine-jug stew, read more here.

Steamed Chinese Sausages with Arrowhead 花开富贵(腊肠蒸芽菇)~~欢喜过马年



This is an easy dish to be prepared, simply steam the Chinese sausages and arrowhead. Since I have some free time, I tried to assemble them to look like a flower shape, Chinese said 花开富贵, good name and good dish to serve to your guest during CNY.

Braised Napa cabbage with Egg floss 蛋酥滷白菜~~欢喜过马年


 The braised Napa cabbage is a popular and common dish in Taiwan, they called it as 滷白菜.
The other day I saw this dish in a Taiwan cook show (by Taiwan's celebrity chef  阿基師), and I know this dish must be good, because use Napa cabbage to braise it, sure taste very refreshing sweet.

Chinese Crispy Fried Stuffed Eggplants 炸香酥酿茄子

I saw a crispy fried eggplant photo shared by Nami Just One Cookbook in her Instagram, she had this dish in a Chinese restaurant. I know it must be very delicious, as I always prefer eggplant to be deep fried. So I created this recipe and it was well received by my family, even my kids not fancy with eggplant, also gave thumbs up.
